Chilled to 8C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, just great for colour and flavour extraction. The ferments are pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor tannin, before pressing off skins through an airbag tank press. Pumped to French oak barriques from a number of Bordeaux cooperages for malolactic, barrels are racked twice over ten months maturation and development. Treated to fining trials for essessment of the final balance, Fraser Gallop is bottled unfined after a cross flow filtration.

Bright crimson, ruby hues. A nose of red fruits and plum, mulberry and cranberry, floral notes and violet, the trademark Wilyabrup Cabernet dustiness over subtle oak adds complexity. The palate is soft and approachable with juicy plum and pomegranate flavours. Consistent, grainy tannins not unlike the astringency of cranberry juice. Background oak allows the fruit to shine, acidity and alcohol levels are in balance.

Inspired by the great Crus of Bordeaux, the aim is to build complexity within a single vineyard wine, to allow the fruit to shine, as complemented by the finest oak, a Cabernet of profound structure, polish and finesse. The inclusion of small portions Merlot and Malbec, Petit Verdot and Cabernet Franc, are treated to a regimen of cutting edge and old world vinification techniques. Fraser Gallop's superlative Cabernet vines are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavours.

The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.

Deep crimson colour with rich hues. Fraser Gallop shows a remarkable complex array of aromas of black cherry, dark fruits, bitter chocolate, forest floor earthiness and pomegranate molasses richness. Layers and layers of flavour provide for a seamless palate. Tannins are quite fine and chalky, providing great structure for aging. A wine of richness and elegance.

Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

$2299each $275DOZEN EACH DOZEN Semillon and Sauvignon Blanc are harvested in the cool hours of morning and delivered promptly to the crush pad. Grapes are de-stemmed, crushed and gently pumped through a chiller on way to the Bucher XPF 80 press to get the must down to 8C. Juices are settled at 8C, racked off gross lees and warmed to 16C for fermentation. The juices are fermented in tank with two different yeasts to maintain freshness, bright fruit flavours and aromatics. A small proportion is fermented in new and one year old French oak barriques which adds to the complexity, structure and length of flavour. Sulphites are added upon completion to deter malolactic. The wine was protein and cold stabilised and cross flow filtered.

Pale straw with green hues. Gooseberries and passionfruit, lemongrass and fruit jube bouquets, rich bubblegum esters fade away to reveal a mineral edged wine. The palate is chalky as the fresh crispness of acidity sits well with supple sweetness. Lime and juniper berries make for a very delicious style. A well balanced wine with lingering flavours, a nice complexity that keeps you coming back for more.

After an exhaustive search to isolate the finest site for Margaret River viticulture, John Evans and John Tate planted vines on a piece of land along the northern bank of Wilyabrup River. One of Evans & Tate's most enduring labels, drawing fruit from across all of West Australia's premier winegrowing precincts, Gnangara have consistently delivered opulent, mouth filling red wines which are charged with the definitive west coast style and charm. $1499each $179DOZEN EACH DOZEN Cabernet and Merlot grapes from each block of vines are tasted twice weekly to determine the perfect time of harvest. Merlot is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Fruit is gently destemmed into fermenters for a few days of cold soak, infusing aromatics, good colour and tannin structure. Cabernet Sauvignon is picked during the day for immediate vinification. Each parcel is fermented for several days, thoroughly aerated every eight hours along with seed removal. Upon completion, batches are pressed and racked off yeast lees, a choice component is filled to a selection of French oak barrels for a term of maturation, followed by assemblage into the final wine.

Dense purple colour, bright red, purple rim. Lifted ripe plums and red berry fruit notes on the bouquet, complimented by hints of clove and vanilla bean spice. Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by a lovely acid line and supporting oak. The tannins are just there, velvety, the palate extends itself with persistence, to a long dry finish.

The enduring Evans & Tate were at the forefront of Margaret River's rise to international recognition, to this day they are endowed with some of the region's most bountiful Cabernet vineyards. Their viticultural team have trained the resplendent sites to bestow perennially upon the winemakers, vintages of increasing excellence. The best parcels are selected and vinified to a mix of old and new world techniques, to achieve a Cabernet wine with an intensity of flavour in compelling, Margaret River styling.

Prior to picking, grapes are tasted twice weekly to monitor flavour, colour and tannin development. Bunches are harvested throughout the cool of night and early morning, gently destemmed, transferred to static fermenter and cold soaked for several days. Parcels are fermented at 22C to 24C as seeds are carefully extracted and batches thoroughly aerated every eight hours. Upon completion, components are pressed to tank and racked clean off yeast lees, a third of Gnangara is matured in French oak.

Deep purple red colour. Pure Cabernet nose exhibiting briar, fresh blackberry and blueberry aromas ahead of a leafy menthol/spearmint lift. French oak maturation has infused delicate cedar and subtle spice notes. Palate is filled with ripe blueberry and plum, fresh, flavoursome and long with perfectly integrated characters of cedar and toast. Bliss alongside roast beef and crisped potatoes.

Gnangara, pronounced nan-gara, is a reference to the underground spring which nourishes much of the fertile region surrounding the original Evans & Tate wineworks. The perpetually replenished vines yield grapes with great flavour intensity and natural acidity, particularly from sites around Manjimup and Pemberton. The freshness of lime zest comes from Manjimup, Pemberton contributes vital slatey and grassy characters.

$1499each $179DOZEN EACH DOZEN Sauvignon Blanc, principally from Manjimup and Pemberton, a pure varietal wine of intensity and concentration. The cool maritime nights and favourable ripening seasons stimulate the vines to develop pungent characters and electrifying acids in the fruit. Grapes are picked throughout the cool of night and lightly pressed. Juices are cold settled in tank at 10C for two days before being racked, warmed to 17C and inoculated to choice strains of yeast for a cool fermentation. Upon completion, portions are kept on light, fresh yeast lees for up to three months. Components are assembled and lightly fined, stabilised and filtered, minimal handling retains the attractive primary fruit qualities of the Gnangara style.

Brilliant pale yellow hue. Intensely varietal with layers of lime zest, fig, passionfruits and cut grass. Dry and beautifully refreshing, especially when slightly chilled. The freshness of lime zest comes from the Manjimup component, Pemberton contributes slatey, grassy flavours. Block 1 is a steep gravelly slope of old, dry grown Semillon Sauvignon vines, amongst the first ever planted in Margaret River, yielding a very small crop of the most articulate Semillon and Sauvignon Blanc with a depth of flavour and intensity rarely seen. Only the purest free run juice are treated to a rich course of barrel ferments in seasoned French oak, followed by a term of eight months maturation. Lemony mineral, mesmerizingly complex with underlying toastyness, an amazing palate extension of gooseberries and lychee lingering to a clean ultra dry finish.

Block 2 was planted to the renowned Houghton clone of Cabernet on a steep northerly slope of optimal sunlight in the early 1970s. The old, dry grown vines have sunk deep roots into the gravelly loam soils and yield a harvest of superlative fruit with each vintage. Grapes are de stemmed into open top fermenters, treated to hand pumpovers and maceration on skins for optimal extraction, followed by eighteen months maturation in French oak barriques. A voluminous palate, substantial by Margaret River standards, driven by fleshy dark fruit and underpinned by the ripest tannins.

Established 1975 to Gin Gin Mendoza clone Chardonnay, Block 6 is a steep south facing slope of reduced sunlight in the heart of Wilyabrup Valley. The precious dry grown vines yield a meagre harvest of distinctive, refined minerality. The purest free run juices are treated to vinification in a high proportion of French oak barriques and ten months maturation. Pears and apple dominate, suppleness of struck match, the savouryness of flint, the intense palate depth of old vines fruit contributes penetrating, mouth filling flavours and texturally refined, satin richness.
