Waipara River passes through a town of the same name on its course to Pegasus Bay, thirty minutes north of Christchurch. The vines enjoy a sheltered position near the sea, where warm days, cool nights and a dry autumn, result in a very prolonged ripening period. Pegasus Bay believe that patience and attention to detail are central to growing the most powerful fruit and vinifying the most compelling wines. Concentrated and rich, a backbone of tangy mineral and acid helps to dry out the palate all the way across to the zippy finish, lingering, spicey and dry.

Sauvignon Blanc is harvested in stages to provide a spectrum of flavours, while the Semillon is left on the vines as long as possible to develop ripe, fully mature characters. Grapes are gently pressed and the juices are naturally inoculated through the action of localised indigenous yeasts. Sauvignon Blanc is vinified in fermenters at lower temperatures to retain the vibrancy of fruit, Semillon is treated to a course in old oak barriques, enhancing structure, richness and length. Upon completion, components are rested on yeast lees (sue lie) for several months to add luxurious textures and flavours, before an assemblage determined by tastings, into the final wine.
 
Light straw hues. Exotic aromas, tropical spice and turkish musk, passionfruit and paw paw, supported by an array of citrus fruits and wild thyme. Good concentration in the mouth, refined and elegant with a spine of tingling minerality and crisp acidity. Semillon adds mid palate weight, the French add Semillon to Sauvignon Blanc for longevity, Pegasus Bay is designed to evolve engaging complexity.

As vines in the emerging Snowy Ranges Tumbarumba district of New South Wales come of age, Penfolds can stray outside their jurisdictions in South Australia to acquire outstanding quality harvests of estate grown fruit for the construction of a generously flavoured and tastefully oaked Chardonnay. A beguiling and elegant wine, grapefruit characters define a citrus acid core, structural and textural, juicy with lemon pith phenolics providing great mouthfeel and length of flavour. Bin 311 offers profound varietal definition and seamless integration.

Tumbarumba is one of Australia's most exciting cool climate, high altitude viticultural districts. Penfolds has worked with Chardonnay here since the early 1990s. Attractive ripe citrus flavours develop in the grapes, while hanging onto delicate acidity, translating into a wine with excellent balance and finesse. The Bin 311 style typically expresses a mineral acid backbone, complemented by barrel fermentation and maturation in seasoned oak. The hand harvested grapes are brought to the winery in pristine condition. Minimal filtration is employed, preserving the elegant fruit flavours. The finished wine is matured several months in a selection of prior use French oak barriques.
 
Pale golden hue. Immediately, delicate aromas of spring flowers and lemon blossom abound, underpinned by nuances of nougat/ biscuity lees derived complexity, concluding with traces of freshly squeezed lemon drops. A fine and elegant palate showcasing white peach and nectarine stonefruit, finishing with a lovely wet river stone minerality providing wonderful persistence of flavour.

A masterful discipline of traditional winemaking techniques, aimed at preserving the wondrous textures and engaging eloquence of outstanding quality fruit, is followed by a judicious term of age in the finest French oak barriques. Raspberries and black cherry perfumes leap from the glass, opulent with olive and tapenade savouryness, its warm, tealeaf tannins in support of a velvetine palate that's garrulous of bush fruits and fragrant tradewind spice.
