The musts are pumped fermenters and left to cold settle before the onset of a natural, local yeast vinification. Temperatures are closely monitored to avoid any possible risk of oxidation while retaining freshness and aromaticness. The wine is racked and treated to a minimal addition of sulphur dioxide, followed by a period of gentle rest prior to bottling.

Clairault are one of the pioneering vineyard wineries of Margaret River. Their aim has always been to create balanced, well structured wines which reflect a unique terroir and the outstanding quality of fruit from a mature site. Semillon in particular is a stand out performer, vinified alongside parcels of intensely aromatic Sauvignon Blanc, into a crisp, clean wine of exciting mineral fruit character, the classic dry Margaret River white, offering immense drink now appeal.

Fruit picking occurs over several days as each block achieves optimal ripening, harvested throughout the cool of night and chilled. Parcels are cold pressed, settled and vinified to a variety of techniques, a fifth is fermented in French oak barriques for richness and texture. A unique strain of yeast is employed to enhance the passionfruit and gooseberry of Sauvignon Blanc. Upon completion, batches are held for a month on gross lees while gently treated to battonage before bottling in July.

Pale straw hues. Bright bouquet, newly cut grass characters, guava, grapefruit and orange blossom notes. Pleasingly dry, its vibrant acidity, driven by crushed lime, followed by white pear, lemongrass and dried apricot flavours. Time in French oak has infused a lingering, creamy finish accompanied by subtle minerality.

The handsome manors of Clarence House were built at the very epicentre of Hobart's colonial market gardens, upon the fertile foothills of Meehan Ranges. The unspoiled viticultures here ripen a magnificent harvest of Sauvignon Blanc, more flavourful than her northern siblings on the mainland, bristling with aromatic fruits and layered with luscious textures. Sauvignon Blanc was amongst the first plantings here, the vines are now well into maturity. There is an emphasis here on clarity of varietal fruit and length of flavour. Sourced predominantly from hillside vineyards in the cool Upper Yarra, grapes are gently pressed, approximately a third of the juices are barrel fermented and matured in a selection of older French oak barriques and puncheons. The balance is treated to a course of vinification in controlled fermenters and stored on fine lees with occasional stirring. A small percentage of Semillon from the prestigious Rising Vineyard is included into the final wine to add complexity and texture. Alcohol 13.0%

Pale straw with light green hues. Clean and fresh nose with attractive notes of lemon rind, lychees and passionfruit. Underlying nougat barrel fermentation characters are present adding further complexity. An elegant style offering flavours of passionfruit, lychees and lemon citrus. Intervention in the cellar is minimal out of respect for the true character of a special vineyard, whilst exposing the textural elements for a more evocative style of Sauvignon Blanc, achieving a wine with distinctive fine, soft, chalky texture and great elegance.

The second, lower terrace of the site comprises younger stony soils interlaced with lumps of limestone, providing an excellent environment for Sauvignon Blanc. All white wines from the vineyard show a distinctive fine soft chalky texture and great elegance. Mostly destemmed grapes and a parcel or two of whole bunches are vinified to a mix of wild and cultured yeasts in a combination of fermenters and cuves, followed by several months on gross lees in a selection of seasoned French oak barriques.

Rich aromatics of fresh lime juice, elderflower, lemongrass and nectarine fruit combine with flint, jasmine and dried herbs for an intense and complex bouquet.
