Dutch explorer Gulden Zeepaard was not the first tall ship to chart the coast of Western Australia but she did predate Captain Cook by a century and a half. Today, Gulden Zeepaard's logo adorns the label of West Cape Howe. Headquartered within the grounds of their undulating home vineyard at Mount Barker, the West Cape Howe team collate parcels of Semillon and Sauvignon Blanc from across the finer viticultural precincts of the Australian west, for the construct of an intense wine which would unnerve its laureate siblings from across the Tasman.

Fruit is crushed with minimal sulphur and chilled prior to pressing. Free run juices are kept separate and pressings fined to remove phenolic compounds. After a period of cold settling, juices were racked and filtered, followed by inoculation through choice yeasts and cool tank vinification at a steady rate for two to three weeks, the temperatures closely monitored and controlled. Upon completion, the components were racked and the final assemblage determined, promptly followed by an early bottling to retain freshness.

Pale straw yellow hues. Highly aromatic style exhibiting tropical notes with subtle citrus and fresh grass aromas. A vibrant and flavoursome palate combining the ripe, textural elements of Semillon with lighter refreshing Sauvignon Blanc characters. Stone fruit flavours, citrus notes and refreshing acidity combine to give the wine a clean, moreish finish.

After three days of cold settling, juices are racked off and an aromatic yeast is introduced. Fermentations are halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.

Freshly cut grass aromas, pink grapefruit, passionfruit and gooseberries, Primary fruit in the middle palate maintains interest from start to finish, flavours of lemon and preserved rind, fruit salad and figs. The success of Australia's southwest regions are due in no small part to decades of viticulture by Capel Vale. Grapes from the cooler parts of Pemberton are harvested at optimum ripeness, crushed, de-stemmed and chilled. Juices are transferred to fermenters after three days cold settling and introduced to aromatic yeast. Vinifications are halted early to preserve natural grape sugars, adding body and enhancing fruit character in the finished wine.

Limpid pale straw green colour. Fine gravelly mineral aromas of Pemberton soils, citrus and cut grass, snap bean and snow pea working against a backdrop of mineral elements, kiwi and herbaceousness. The aromas are carried through to the textured palate, complemented by flavours of honeydew melon, tropical fruits, limes and flint. Some blocks are picked early to retain higher acid and fresh citrus characters, others are left to ripen fully. Fruit is gently pressed, cold settled and racked for inoculation. A variety of yeasts are added, some are selected to accentuate the aromatics of fruit, others add mouthfeel and texture. Some components remain on yeast lees and are stirred post fermentation, which adds a further textural element to the wine. A portion is fermented in French oak puncheons, while being treated to heavy lees stirring, developing complexity and a subtle undertone of savouriness.

Pale lemon colour. Subtle floral notes mingle elegantly with citrus zest, creamy lemon curd and fresh asian herbs. A textural long palate, bright tropical and citrus notes with a fine minerality and long balanced acidity which carries the flavours right to the end of the palate. A soft mouthfeel, good length and a clean finish. Creamy and harmonious, an awesome Marlborough wine.

Paradoxically, the Catching Thieves wines are honest, reliable and desirable. Grapes are harvested and crushed directly to the press, where only free run juice are retained for cold settling. Juices are racked clean and warmed prior to seeding with a strain of yeast which encourages varietal expression. Cold fermentations accentuate and retain primary fruit flavours. Components are separately treated and assembled upon completion to create a wine of elegance and structure.

Pale straw with light green hues. Intense citrus and snow pea aromas complemented with fresh passionfruit and exotic tropical fruit notes. A crisp, clean palate with dominant passionfruit and stonefruit flavours, beautifully supported by a citrus acid backbone giving the wine lovely structure and a lingering, zesty finish. Black Thursday Vineyard played a role in extinguishing some nasty bushfires which threatened the Adelaide hamlets of Kuitpo and Gumeracha. Cheers were raised and there were many thanks given, but nothing could save chilled bottles of Chain of Ponds Sauvignon Blanc from the tired and thirsty firefighters. Consider this drink to be something quite the opposite of a parched and arid flame, think of green grass, iced kiwi fruit, cool cucumber and asparagus. A great match to the freshest sashimi or traditional Coquilles St Jacques.

Two parcels are picked early in the season to maximise herbaceousness, apple and cucumber notes. The balance were picked to a schedule which would maximise natural acid, tropical flavours and mild citrus characters. Grapes arrive at dawn and are treated to an air bag press, keeping the free runs separate. Parcels are inoculated to a selection of yeasts and separately fermented. Batches were held on yeast lees for two months to enhance mouthfeel, the best components were assembled into the finished wine and bottled early, unwooded and unoaked, to retain vibrant freshness.

Pale straw with green hues. Freshly cut tropical melon nose with nuances of passionfruit, crisp apple and freshly squeezed lime juice. Hints of gooseberry, box tree and cucumber. Lush fruit driven palate, lively and refreshing, exhibiting balanced tropical fruits and citrus along with crisp freshly chilled apple and cucumber notes. Well balanced linear acidity lifts the fruit sweetness and gives a mouth watering finish of great length and flavour persistence.
