Voyager Estate's philosophy is simply to make the best wines possible. Traditional vinification techniques as well as the latest technologies are employed. Semillon and Sauvignon Blanc are harvested throughout the chill of night, each parcel is destemmed and pressed to fermenters for settling and clarification, each batch is racked and innoculated with a mix of X5, QA23 and UOA Maxithiol yeast cultures for two to three weeks of vinification. A part of the Semillon is treated to ferments in new tightly grain French oak barriques, followed by a course of maturation and lees stirring battonage for two months. Upon completion, components are assembled, stabilised and filtered for bottling.
 
Pale straw green hue. Aromas of tropical fruits with citrus pith, hints of white nectarine and talc. Vibrant with rich fruit flavours of citrus, fleshy stonefruits and tropical notes. A small component of barrel fermentation offers additional complexity and texture to the palate, finishing with a clean, crisp natural acidity. The fruit is fine and pure, the tropical flavours are upfront and bold.

Waimea Estate Sauvignon Blanc
Nelson
Nelson River in general, and Waimea in particular, have a reputation for highly aromatic wines. Sauvignon Blanc is hand picked from a range of choice vineyards, including the Wells and Robertson blocks, grown to the stony alluvial soils of the Waimea Plains. Waimea Estate has garnered significant interest due to the fruit driven purity, beautifully textured palate, admirable balance and polish. Treated to whole bunch pressing and bâtonnage, achieving a multi dimensional wine, with pure varietal expression, underpinned by subtle texture.

Grapes are harvested and destemmed without any crushing, protecting the aromatic freshness naturally found in Sauvignon Blanc. Some portions were given up to six hours skin contact for added complexity and impact. After pressing the juices are cold settled for three days to achieve low solids prior to ferment. To attain vital aromatic definition, the fermentations are carried out in tank, the musts are inoculated with a range of aromatic yeasts and fermentation temperatures are kept low. For a textural component, some of the ferments underwent frequent lees-stirring for over a month after vinification was complete. Following assemblage, the wine was lightly fined, stabilised and filtered.
 
Brilliant, light straw in colour. Zesty and racy, this lovely example of Nelson Sauvignon has aromas of gooseberries, green apple and citrus combined with a flinty, mineral complexity. Waimea has become a popular alternative to the Marlborough style, exhibiting the essential gooseberry, lime and capsicum aromas, with a flinty palate adding to the wine's appeal. The acidity tends to be toned down and palate interest is enhanced through skin contact, yeast selection, a range of fermentation temperatures and time spent on lees. Waimea is balanced by a full and textured palate, giving the wine depth and concentration. The wine of choice to accompany the freshest seafood.

The Cumming family have farmed in the Bendigo region for fifty years. Ron and Peter have a strong background in horticulture and place a strong emphasis on vineyard management. The emphasis is on producing high quality, fruit driven wines with strong varietal definition and a generous palate. Three new vineyards have been planted at Bridgewater -On- Loddon to enhance complexity and improve overall quality. A conspicuous performer, Water Wheel is one of Bendigo's most highly decorated and internationally renowned winemaking estates.

Sauvignon Blanc vines are planted on light, well drained soils and cropped at three tonne to the acre. Vines are hedged trellised, exposing grapes to the sun achieving maximum ripeness. All blocks are irrigated from the nearby Loddon River through the use of ground level mini sprays. Fruit is harvested to a timetable determined by full physiological ripeness. Parcels are delivered to the winery in pristine condition, crushed and inoculated to select yeasts followed by a temperature controlled vinification in tank. Fermented at 12C to 15C over the course of several days, batches are cold stablilized and earth filtered followed by the final assemblage and sterile filtration to bottle.
 
A bright green straw colour. Water Wheel exhibits grass, lime and lemon citrus overtones on the nose, vegetable characters, asparagus, green bean and kiwi are in the background. The palate shows strong citrus flavours with some mineral characters in the middle, good fruit and acid balance. The wine has a clean, crisp and persistent finish, the ideal aperitif, well suited to seafood, risotto and lighter summer dining.

Great wine can only be made from exceptional vineyards. West Cape Howe take a holistic approach to viticulture, soil health and environmental sustainability are essential but a close husbanding of vines is also a priority. The winemaking team dedicate many months leading up to vintage, ensuring that only the best parcels are considered. A vital backbone of Langton Vineyard Sauvignon Blanc is harvested throughout the cool of night at optimal ripeness. Exclusively free run juices are inoculated for a fortnight of cool ferments, closely managed to capture intensity of aromas while preserving crisp varietal flavours. Components are assembled upon completion and bottled early to retain freshness.

Harvests of Sauvignon Blanc are collated from good vineyards throughout the finer winegrowing precincts of Marlborough. The fast draining, low fertility soils, warm days and chilly nights form a mesoclime that's unmatched anywhere else in the world for yielding lusciously fruit driven Sauvignon Blanc wines. Grapes are crushed and gently pressed before cold settling. The clear juices are racked off and inoculated to choice yeasts. A long cool vinification in controlled fermenters captures and retains the vibrancy of Marlborough fruit. Batches are treated to a term on lees before assembling into the finished wine, stabilised and filtered prior to bottling.
 
Light straw hue. Lifted nose of passionfruit and lychee flower, kiwis and kaffir lime. A lifted blackcurrant palate, complexed by notes of wet stone and thyme, elegant yet full with sufficient weight and texture to mate alongside white meat roasts, all balanced by flinty minerality. Throughout the growing season, the team monitor grapes reaching full ripeness. Fruit is harvested in the cool early mornings to capture and retain all the characteristics of premium Sauvignon Blanc displaying a wonderful array of flavours, ranging from sweet tropical fruits through to the fine crisp expression of snow peas. Parcels are individually destemmed and crushed, chilled and treated to a gentle airbag pressing with the free run fractions kept separate to highlight the quality of fruit. All fermentations are run cool, with strict temperature control enabling the retention of freshness and vitality. After extensive trials, the final wine is assembled on the basis of flavour profile and outstanding varietal character.

Wirra Wirra Hiding Champion Sauvignon Blanc

Greg Trott, the man who nursed Wirra Wirra back to health and re-introduced the estate's noble wines to the world, was a wanderer. A simple run to the local shops might evolve into an interstate luncheon. He would return a day or so later, bemused by the fuss. It seemed to all, that Trott was in training to become Olympic Hiding Champion and it became part of the folklore at Wirra Wirra. Sauvignon Blanc is sourced from Jeff and Ann Gower's spectacular Yandra Vineyard at Lenswood in Adelaide Hills and vinified into a rejuvenating, stylish young wine.

Wirra Wirra has been working closely with the Australian Wine Research Institute to identify unique yeast strains, with particular interest around the resultant aromatics and palate feel, in a quest to produce world class Sauvignon Blanc. This period of exploration has evolved into the Hiding Champion. Hand picked grapes are destemmed, crushed and cooled to 5C. Juices are pressed, retaining the free run and solids in separate fermenters. Batches are warmed to 17C and inoculated with choice yeasts. Upon completion of ferment to completely dry, the Hiding Champion is chilled and stirred on lees briefly prior to gentle filtration and bottling.
 
Pale straw with green hues. Pungent nettle, lemon spice, fresh herb and notes of tropical fruit. The palate rides on a wave of lively natural acid but is well supported by sweet soft gooseberries and grapefruit, a touch of passionfruit and leafy spice. Hiding Champion shows plenty of texture and depth, the tight minerality leads to a clean and lively finish, lingering and pure.
