Wander through the rolling and elevated aspects of Adelaide Hills at vintage and you'll find the Bleasdale team hard at work, timing the pick of the crop and collating the choicest parcels from the finest vineyards. They spare no expense in determining those parcels can best deliver a juicy and revitalizing style. Sauvignon Blanc has established its own style here, translating into crisp and vibrant wines with steely acidity, puckering fruit flavours and splendid clean finish. Fruit is crushed and chilled on skins for several hours of optimal extraction. The exclusively fee run juices are fermented to dryness, followed by several weeks of regular lees stirring battonage on light solids.
 
Pale, light straw hue. A crisp, fresh nose with lemongrass and gooseberry aromas, green vegetable, cut citrus and hints of luscious tropical fruit fragrances. A pale straw yellow colour. The nose is beautifully defined, it couldn't be anything other than Tasmanian. Aromas of white cherry, limefruits and lemon, ripe melons and citrus blossom. The palate is medium dry with sweet, ripe white peach flavours, cut melon and floral characters. Such a highly engaging wine with generous array of aromas and fruit flavours, immensely pleasant and universally popular, a great choice for dining and entertaining.

Sourced from fine vineyards, Breathing Space puts a focus on capturing the intense Margaret River regionality while retaining the eloquence of varietal character. The well protected, south facing slope of the central Wilyabrup vineyard provides a cool pocket within an otherwise warmer location. These more temperate mesoclimes are further balanced by cooling breezes from the Indian Ocean, which deliver excellent ripening conditions throughout the growing season. Breathing Space wines are styled for fun, designed to be easy to drink and allow one to escape the chaos of the big city. Minimal winemaking influence allows the fruit to be the defining factor in the finished wine.
 
Light pale straw hue. Good varietal characteristics show through on the nose, tropical and stonefruit aromas. A zesty upfront palate of citrus and ripe orchard characters is followed by green vegetable and herbaceousness, over a backdrop of complex muted nettle and green pea notes. Brokenwood Cricket Pitch White

Brokenwood are renowned for Semillon, they retain vineyards from which to collate the finest parcels, a component is selected to be vinified alongside choice harvests of Sauvignon Blanc. Cricket pitch is a reference to the first block of vines Brokenwood ever planted, a community block which was acquired after a hotly contested auction against neighbouring Hungerford Hill. An assemblage of fruit, hand picked off sites in Cowra, Orange uplands and Hunter Valley, are fashioned into a revitalizing wine of seamless integration and engaging complexity.

Brokenwood are one of the nation's great wineries, they conduct a search every year to identify harvests of fruit which can be compliment the enduring Hunter Valley style of classic dry white. Parcels of Sauvignon Blanc and Semillon from outside the Hunter Valley are processed to the primary juice stage before transport to the Brokenwood wineworks for fermentation and assemblage. This prelude to vinification ensures that the delicate grape and fruit aromas are preserved. Components are treated to a brisk temperature controlled ferment to capture the clean varietal expression of fruit and retain freshness. A small portion is oak barrel fermented to add texture and complexity.
 
Bright pale yellow with green hues. Bouquets of lime citrus, lifted lemongrass and tropical fruit, herbaceousness and savoury hay notes. A touch of barrel ferment characters adding subtle complexity and a further dimension to the palate. A fine acid structure provides length and liveliness to the finish. Brookland Valley's vineyards are closely planted as the lie of land flows down the valley, from sun drenched north facing slopes to gentle flats along the banks of the Willyabrup Brook. After adopting a technology driven approach to viticulture, the quality of all Brookland Valley's white wines have improved dramatically. Parcels Semillon and Sauvignon Blanc harvested from choice sites, are cold pressed to capture the intensity and retain freshness. Juices are vinified in controlled fermenters to preserve the crisp and crunchy characters of the vineyard. After a spell of extended lees contact to infuse depth and complexity, components are assembled into the definitively classic and dry, Margaret River white.
 
Pale straw hue with tinges of green. Fresh and punchy nose, light herbaceous characters are complemented by notes of freshly cut hay, braced with citrus blossom. A soft and vibrant mouthfeel, juicy acidity, crisp and lush tropical fruit flavours dominate, passionfruits and a squeeze of fresh lime. Herbaceousness finishes back of the palate, a fresh and fine acidity adds persistence and depth.

Wallcliffe is a tiny production wine from a unique parcel of soil in the middle of the Margaret River region. The wine represents the vagaries of climate, individuality of site, the complimentary characters of the two varieties and a restrained yet evocative winemaking approach. Wallcliffe is crafted to evolve and to develop different characters and complexity. Treat Wallcliffe to scallops or sticky belly of pork.

Cape Mentelle enjoy access to some of the Margaret River's most elite vineyard sites, and have long been one of the region's most ardent formulators of classy white wines. The Wallcliffe Vineyard was established on a ridge of free draining lateritic gravel between 1970 and 1972. Sauvignon Blanc and Semillon were grafted onto shiraz vines in the early 1980s and today produce the distinctive fruit. Wallcliffe is a wine that creates itself in the vineyard. Plainly fermenting the different plots individually in French oak barriques helps to build and define individual characters. A selection of the best barrels are then blended to make a wine which best reflects the characters of the season and the vineyard.
 
Aromas of lemongrass, citrus blossom, lychee, coriander and wet slate. The fresh citrus fruit characters of the nose transfer seamlessly to the palate, with some white fleshed nectarine and subtle smoke characters also evident. The palate is tight and focused complementing the creamy texture derived from wild yeast barrel fermentation and leads to long bright and expressive finish.
Cape Naturaliste Semillon Sauvignon

Originally a coach inn for travellers on the three day journey between Perth and Margaret River, Cape Naturaliste also served as a destination for whale ships taking on supplies of vegetable grown to the valley's rich alluvial soil. A holistic, bio-dynamic philosophy, practised amongst the vines at Cape Naturaliste, yields harvests of grapes which are as natural as those picked off vineyards long ago. A brisk fermentation achieves the clean, fresh palate for which this style is so renowned.

The undulating topography of Cape Naturaliste is an asset for drainage. Sea based fertilisers and a fish head soup are employed to increase the micro- biologic life of soils. Norwegian Kelp is used as a foliant spray and has an immediate effect on the health of plants, contributing to evenness of fruit set. Pruning techniques, cropping levels, canopy treatment and restricted intrusion from vehicles, are just some of the measures taken to ensure that this unique vineyard produces the cleanest and healthiest fruit in Margaret River. Parcels of Semillon grown to rich alluvial flats are vinified alongside Sauvignon Blanc planted to sandy loam over limestone, alluvial flats and quartz gravels, to be bottled promptly upon completion.
 
Very pale grassy green hue. Bouquet shows stonefruit and tropical notes followed by hints of citrus. Fresh herbal flavours add weight to the palate which finishes clean to zippy acidity and a closing impression of freshness. A touch of barrel ferment on occasion is added to the wine, achieving a fuller mouthfeel and contributing to the wonderful depth of palate.
