Squealing Pig are born and bred Awatere Valley, they understand the soils and aspects well and are on best terms with the finest growers. A collation of parcels from good vineyards which can yield harvests of Sauvignon Blanc displaying generous fruit flavours, splendid varietal definition and refreshing acidity are assembled into a single wine of exciting complexity and refined structure. Fruit is crushed and cold settled into temperature controlled fermenters, inoculated to wild and cultured yeasts before a cool vinification aimed at retaining all the brisk, vital expressions of the vineyard. Upon completion, the finished wine is promptly bottled with minimal handling to capture the essence of Awatere Valley Sauvignon Blanc.
 
Pale colour with a subtle lime green hue. Lifted and aromatic nose of tropical notes and kiwifruit, fresh Italian herbs and complex minerality. The palate is lively and long showing racy acidity, generous fruit flavours and mineral characters combine, creating a layered and complex Sauvignon Blanc. Rob Dolan is a charismatic winemaker and towering sportsman to boot. At 6 foot 6, Rob acquired the nickname Sticks during his dual premiership for Port Adelaide. Dolan settled on a tally of superb sites in the Yarra Valley from which to draw fruit for his self titled label. The lion's share of the Sticks winemaking operation grew out of the eminent Yarra Ridge vineyards and wineworks, one of the most successful brands and picturesque estates in all Yarra Valley. Parcels of Sauvignon Blanc from Yarra Glen and Healesville are loaded directly into the press, crushed, racked for clarity and seeded, a portion of cloudy juices and barrel ferments infuse complexity, batches are rested on sedimentery yeast lees for several months to build richness and texture.

Mark Lane found his way to Margaret River in a roundabout way. For a while he made cheese and wine in Victoria with the likes of Tarrawarra and Eyton-on-Yarra before taking the trek west to take up position as chief winemaker with Deep Woods and Flying Fish Cove. Having earned a reputation as one of Margaret River's most talented winemakers, Lane pulled together a young and enthusiastic team to establish Swings & Roundabouts. Drawing the highest quality Sauvignon Blanc and Semillon from estate vineyards, the fruit is gently processed to achieve maximum flavour profiles and aromaticness. Early bottling is a key element to ensuring that the wine retains freshness and vivacity.

Sauvignon Blanc is harvested throughout the chill of early morning hours to preserve optimal freshness. Harvested early for the zesty citrus characters and slightly later for blackcurrant passionfruit flavours. Fruit is whole bunch pressed to optimal skin contact, batches are fermented at lower temperatures to retain fragrant aromatics. Components are aged on sedimentery yeast lees while treated to regular battonage, infusing elegance and subtle complexity. A short term of age is followed by assemblage into the finished wine.

Sauvignon Blanc from individual blocks are assigned to pressing and barrel fermentation by merit. A variety of clones are planted, the unique blocks and rows of vine are managed individually to maximise fruit quality at each specific site. Aerial infrared photography is employed to identify variations which require irrigation and nutrition, practices which translate into good harvests in sound condition with full ripeness and excellent varietal definition. Following the crush, juices are run off skins immediately after pressing, then cold settled to remove solids. Components are treated to inoculation and fermentation under strict temperature controls to maximise retention of fruit flavours.
