A backbone of estate grown Sauvignon Blanc from the Mud House property in Upper Wairau Valley, is vinified alongside harvests from carefully selected grower vineyards in the Awatere, Ure and Wairau Valleys. Each parcel is monitored throughout the ripening so it can be harvested at optimum maturity. Grapes are transported to the winery and crushed with minimal skin contact to avoid juice deterioration. After settling, each batch is vinified at cool temperatures in fermenters through a variety of cultured yeasts to add complexity while retaining fresh fruit characters. Batches are assembled into the final wine shortly after the completion of ferments and prepared for bottling.

Munamuna believe that anything worth having deserves protection. Were McCorkindale to reveal the secret location of his vineyards, the ensuing rush to acquire any limited quantities of fruit would force prices higher and put the exquisite wines of Munamuna out of reach for many. High security fencing in the heart of Marlborough, around the region's most splendid vineyards has spurred rumours for years, but rumours are rarely true. One unscrupulous operator who knew about the sites and tried to exploit the location was last seen on a small fishing boat talking on a satellite phone in one of the local inlets. What Munamuna can safely tell you is that their Sauvignon Blanc is from the finest vineyards in Marlborough.

Light yellow straw colour. Intensely aromatic, Munamuna bursts with characters of gooseberry and passionfruit followed by hints of hawthorn and citrus. The palate is vibrant, dry, with racy acid and typical intense fruitiness. Innovative winemaking has created a lively, intense wine, culminating in a crisp acid finish. Serve chilled with seafood, fresh steamed vegetables, or enjoy on its own as a delicious and satisfying aperitif.

Each site contributes unique expressions, from topical capsicum and nettle in the early blocks, to luscious lychee and passionfruit from the later harvests. Grapes are harvested at night or throughout the cool of morning, beginning with the early ripening blocks and finishing in Awatere Valley. Fruit is gently crushed, pressed and fermented to a variety of aromatic yeasts, the aim being to preserve flavours and aromas developed in the vineyard. Upon completion, the wine was held on lees for several months, enhancing creaminess and infusing flavours.

Sauvignon Blanc is planted on near perfect Terra rossa soils, providing an ideal level of nutrient and water retention. Vines are significantly influenced by the cooling sea breezes of the Southern Ocean and it's associated climate. Nearby plantings of Norfolk Island pine (Araucaria heterophylla) which grow to over 200 feet provide an impressive, dominating influence over the surrounding landscape and the vines. Grapes are selectively harvested, full protective handling is employed to avoid any oxidation or browning. Juices are clarified, inoculated and vinified at lower temperatures. Upon completion, components are assembled and bottled immediately to maximise retention of fresh fruit characters.

Palliser's vineyards in Martinborough are trained to achieve low canopy densities whilst exposing the fruit to maximum amounts of sun. Combined with judicious leaf plucking, this produces the distinctive fruit flavours in the wine. Reliable dry autumns increase the intense flavours, and low cropping levels are the result of cool windy spring weather. When the grapes are judged to be at their optimum maturity, they are harvested and vinified to retain the inherent fruity qualities of the finest Sauvignon Blanc. A backbone of estate grown fruit is vinified, partially to native yeasts, in chilled fermenters alongside parcels from good local growers, followed by four months on sedimentery lees to build complexity.

Brilliant pale straw with light green hues. The bouquet is full, open and voluminous with fresh and powerful passionfruit aromas along with gooseberries, lime fruit and flinty minerals that blossom. Dry to taste, the palate has layers of rich, pungent passionfruit and grapefruit flavours with ripe capsicums and fresh herbs that fill the mouth.
