Wirra Wirra patriarch Greg Trott venerated cricket as the most noble of pursuits. He even built his very own concrete pitch at the family farm to emulate his heroes. Trotty aspired to wearing the famous baggy green cap of the national team, even if only to carry the drinks as twelfth man. It's a certainty that if the drinks tray offered Wirra Wirra, Trott would have been warmly welcomed as an essential member of the team. Wirra Wirra treat the selection of their fruit with the greatest of zeal, sourcing a parcel of the most exquisite Chardonnay from a precious site at Lenswood in the Adelaide Hills. Grapes are all hand picked and whole bunch pressed, the free run juices are filled to French oak for an exclusively wild, indigenous yeast fermentation. All barrels are tasted weekly while treated to a course of lees stirring battonage to infuse complexity and encourage malolactic. Barrels are sulphured on lees at various stages throughout a term of maturation in a high proportion of new Seguin Moreau and Mercurey Burgundy coopered oak barrels, to capture and preserve excellence of Adelaide Hills fruit character.
 
Vibrant gold with green hue. Bouquet offers up lifted white peach and nectarine fruits, lemon rind and flint. The fruit is complexed by lemon curd, aromatic cedar and cashew notes. The palate reveals a lovely intensity of nectarine and citrus fruit characters, lemon curd and cedar. A complex balance between the fresh stone fruits, bright acid and wonderful creamy texture.

From some of the oldest Grenache vines in McLaren Vale, picked by hand at maximal ripeness, gently crushed and destemmed into open fermenters, a portion of whole bunches are included for complexity. A fortnight of ferments are hand plunged and pumped over for optimal extractions. Batches are pressed for malolactic and filled to seasoned French oak puncheons for nine months maturation. Heady and lifted, liqueur cherry and wild raspberry, asian spice, ginger, red licorice and rose petal, all framed by lithe, sandy tannins, a generous, graceful Grenache.

Wirra Wirra Angelus Cabernet

Robert Strangways Wigley was an eccentric South Australian cricketer who established Wirra Wirra in 1894. He produced a highly prized Shiraz which was exported to England and the Empire until he passed away in 1925. The cellars fell into disuse after the 1936 vintage and remained inoperable until Greg and Roger Trott rebuilt the ironstone winery by hand in 1969. Tradition has it that the ¾ tonne Angelus bell which sits atop Wirra Wirra was rung thrice daily from the Jesuit Church at Norwood, calling the faithful to prayer.

McLaren Vale, as well as being home to some of the oldest Shiraz vines in the world, is blessed with soils and climes which are ideal. Vineyards contributing fruit to Angelus are up to sixty five years of age, typically low in vigor, producing modest yields of intensely flavoured berries. Parcels are picked in small batches from superior sites at Seaview and Blewitt Springs, Onkaparinga Hills and McLaren Flat. Grapes are treated to a cold soak, inoculation and cap management throughout the ferments, followed by a traditional basket press to oak for completion of malolactic. Each batch is matured fourteen months in a mix of seasoned and new French oak barriques, rack and returned, before the final assemblage.
 
Deep violet purple. Fresh and exceptionally varietal with lifted blackcurrant leaf and cedar notes integrated with some toasty oak. The palate is refined and elegant, mouthfilling with plums and mulberry, black cherry fruits and long, persistent fine grained tannins. Aromatic cedary oak with anise and dark chocolate adds layers to the fleshy red fruit. A wine of balance, power and style, to be served alongside the finest gourmandize.

The late, great Greg Trott, patriarch of Wirra Wirra, saw many of his unusual dreams realised, such as the construction of a cyclopean fence which girts the entrance of the wineworks. One consuming vision however continued to elude him, the building of a medieval siege machine called a trebuchet. Why? To use as a catapult for bombing neighbouring properties with bottles of wine in the hope they would retaliate! A splendid, opulent rendering of Shiraz, brimming with intense fruit, a hint of varietal spice and a touch of Viognier to be different, just like Trotty.

The Catapult style is bright and juicy with textural tannins and plump fruit. A mostly Shiraz wine with a dollop of the aromatic Viognier, grown to superlative sites at Blewitt Springs, McLaren Flat and Seaview. A small inclusion of Viognier is crushed, de-stemmed and cold soaked along with Shiraz for two or three days, extracting maximum colour and flavour without the influence of alcohol. Each ferment is tasted daily throughout vinification. Once the desired level of colour, flavour and tannin are extracted, ferments are pressed into a combination of French oak hogsheads and barriques. Upon completion of malolactic, wines are rack and returned every four months, bottled after a year to fifteen months maturation.
 
Vivid red, brilliant purple edge. Lifted bouquet of musk, ginger spice and bright blueberry fruits with notes of ripe cherry and raspberry. Touches of cedary oak and some complex pine needle and herbal nuances add to the appeal of the bouquet. Juicy sweet fruit floods the palate with plum and blueberry dominating. The soft silkyness is enhanced by fine tannins, flavoursome with wonderful joie de vivre, a wine of vibrant character.

From time to time, Wirra Wirra produces wines from very small parcels of extremely intense, high quality fruit. Chook Block is a unique wine which is only assembled in the most outstanding vintages, pointedly one year in four. It is not made to a particular style, winemaking is purely, in a custodial sense, attempting to reflect the remarkable quality of Chook Block Vineyard Shiraz in exceptional years. Bunches are all picked by hand and treated to the highest scrutiny, removing any fruit that is not of the highest order before inclusion.

Chook Block was planted in 1960 on Nocowie Vineyard immediately behind the Wirra Wirra wineworks. The terroir is fortuitous and unique, sandy topsoils over subsurface sandy loam with red brown impervious clay and patches of limestone. Fruit is cold soaked for five days to extract maximum colour without excess alcohol. Ferments are hand plunged and tasted twice daily. At the required level of dryness and extraction, juices are basket pressed until the first sign of tannin hardness. Batches are transferred to a high proportion of new French oak barrriques for completion of malolactic. Barrels are rack and returned every four months throughout twenty one months of maturation.
 
Dense plum hue with garnet rim. Fresh boysenberries, blackberries and plum, interlaced with sweet cedar, bitter chocolates and licorice, tar and earthy notes. The palate is mouth filling with rich satsuma plums and blackberry fruits, dark chocolate and aniseed. Rich and brooding, balanced by mouth watering savoury tannins and fine cedary oak.

Church Block was the first wine which the late Greg Trott produced under the Wirra Wirra label back in 1972. He took the name from one of the original estate vineyards, which runs next to the small Bethany Church est. 1854 across the road from Wirra Wirra's century old ironstone cellars. Over four decades, Church Block has become an Aussie favourite, consistently offering a smooth, soft red wine that balances the complexity sought by ardent enthusiasts, with the approachability desired by those seeking pure red wine drinking pleasure.

Wirra Wirra sources fruit from a combination of estate vineyards and premium growers at Seaview and McLaren Flat, Whites Valley and Blewitt Springs. Fruit is gently crushed, de-stemmed and vinified at 20C to 28C, pumped over two to four times daily for flavour and colour extraction. Once batches achieve optimal extracts, the ferments are pumped over gently once daily to keep the cap, skins and seeds moist. As juices approach sugar dryness, batches are drained and the remaining skins treated to a basket press. Parcels complete malolactic in barrel and components are assembled, followed by maturation in a selection of new and seasoned French and American oak hogsheads and barriques.
 
Deep plum with vivid red hues. Aromatic nose of leaf, cedar, aniseed and clove spice. Fragrant varietal lift with bright red fruit aromatics of raspberry and plum. Rich, generous palate full of dark cherries over lingering textural tannins. Greg Trott, the man who nursed Wirra Wirra back to health and re-introduced the estate's noble wines to the world, was a wanderer. A simple run to the local shops might evolve into an interstate luncheon. He would return a day or so later, bemused by the fuss. It seemed to all, that Trott was in training to become Olympic Hiding Champion and it became part of the folklore at Wirra Wirra. Sauvignon Blanc is sourced from Jeff and Ann Gower's spectacular Yandra Vineyard at Lenswood in Adelaide Hills and vinified into a rejuvenating, stylish young wine.

Wirra Wirra has been working closely with the Australian Wine Research Institute to identify unique yeast strains, with particular interest around the resultant aromatics and palate feel, in a quest to produce world class Sauvignon Blanc. This period of exploration has evolved into the Hiding Champion. Hand picked grapes are destemmed, crushed and cooled to 5C. Juices are pressed, retaining the free run and solids in separate fermenters. Batches are warmed to 17C and inoculated with choice yeasts. Upon completion of ferment to completely dry, the Hiding Champion is chilled and stirred on lees briefly prior to gentle filtration and bottling.
 
Pale straw with green hues. Pungent nettle, lemon spice, fresh herb and notes of tropical fruit. The palate rides on a wave of lively natural acid but is well supported by sweet soft gooseberries and grapefruit, a touch of passionfruit and leafy spice. Hiding Champion shows plenty of texture and depth, the tight minerality leads to a clean and lively finish, lingering and pure.

In 1947, Wirra Wirra patriarch Greg Trott lost the only watch he ever owned, from that day forth he never bothered with wearing a timepiece again. Confdent to the end that he could tell time by the sun, Trott was notoriously always late, hours and even days. Fortunately, his great legacy to the nation was unhurried and unstrained, to make great wine, one needs to ignore the clock and allow the magic of nature to determine its own course. Adelaide Hills Riesling at its finest, left to its own as it slowly vinifies over the course of weeks, without the distractions of a clock.

From mature sites at Lenswood and Mt Torrens, off vines up to forty years old. The Wirra Wirra team intervene as little as possible in the magic of fruit evolving into wine, placing their faith in the management of vineyards and blessings of nature. Grapes are selectively hand picked to avoid any sun damaged berries, to minimize skin contact and retain delicate aromatics. Bunches are crushed and de-stemmed through a membrane press. Solids are separated, the free run juices are clarified and transferred into fermenters for inoculation with either QA23, Anchor VIN 13 or PDM yeasts, followed by several weeks vinification at cooler temperatures to maximize purity of Adelaide Hills fruit character.
 
Brilliant pale straw, green hues. A lifted bouquet with classic talc, perfumed floral notes and a citrus zest. Displaying an intense core of ripe citrus throughout the palate with persistent flavour and a minerally structure offset by a hint of brown lime. Refreshing acidity persists providing a beguiling mouth feel and a long finish. This wonderfully pristine and classic dry style Australian Riesling can be fully appreciated in its youth.

Mrs Wigley was a particular pussycat who was born at the neighbouring Petrucci residence. Within days her mum had dragged the litter to settle in the Wirra Wirra open fermenters, from then on Mrs Wigley became a permanent feature of the Wirra Wirra cellars. Mrs Wigley, the Rosé, is made by running the juices off, tinted after brief contact on skins, from the grapes, then cold fermenting and bottling early, as you would prefer to do when designing a refreshing, revitalizing pink wine.

Wirra Wirra have been making wine since the 1890s, the current team know their vines well and have determined Grenache to be the varietal of choice for a juicy pink wine. Grapes are harvested and crushed, de-stemmed and chilled to traditional red wine fermenters, pumped over throughout the vinification and held cold prior to being pressed off when the desired pink hue and vibrant flavours are achieved. After cold settling for a number of days to clarify the unfermented juice, batches are racked off solids and fermented through the action of aromatic yeasts for two or three weeks, before being sent directly to bottling without any exposure to oak, preserving the freshness and lifted fruit of fine Mclaren Vale Grenache.
 
Salmon colour with bright red hues. A perfumed bouquet of red cherries, raspberries, strawberries and cream supported by fragrant rose petals and sweet spice. Fresh and ripe crushed strawberries and red cherries contribute to fruit depth and length. The refreshing acidity provides balance and structure and leads to a dry and crisp finish. Best consumed whilst young and fresh. A bliss with prosciutto and fig.

The topical old world accord of Grenache and Shiraz was the first style of wine to be made after the re-establishment of Wira Wirra in the 1970s. It is occasionally released as a special limited edition when the vagaries of vintage permit, the aim being to construct a likeness of McLaren Vale, as it was decades ago, when the requisite accompaniement to such a wine was meat and three veg. Wirra Wirra Original is equally satisfying today alongside paparadelle and porcini, offal and pistachio ballotine or five spice crackling pork.

The founder of Thomas Hardy & Sons is on the record for praising the founder of Wirra Wirra, as the hardest working man he ever knew. Hand picked parcels of Grenache are sourced from mature vineyards in McLaren Flat, Shiraz is collated from choice blocks at Seaview. Grapes are crushed and destemmed into traditional open top, two tonnes fermenters, gently macerated by hand plunging and pumped over for optimal extractions of flavour, tannin and colour. Components are fermented to dry and basket pressed into a selection of seasoned French oak for barrels for completion of malolactic. Batches are racked off lees and sent to mature nine months in neutral French oak puncheons and barriques.
 
Vivid crimson, vibrant deep red hue. Fragrant crushed cherries and raspberry nose, complexed by perfumes of dried herb and musk. The palate displays bright Grenache raspberry and rhubarb flavours, supported by fresh acidity and fine silky tannins. A wonderful, medium bodied style of candor and restraint, resolving on a spicy, savoury finish.

The Wirra Wirra Cellars were built by Robert Strangways Wigley, one of the McLaren Vale's all time characters

Wigley began building at the turn of the century using Dr. A.C. Kelly's plans of a split-level design that his friend Alec Johnston had used to build the Pirramimma winery. Wirra Wirra is an aboriginal name meaning amongst the gums. Born in 1864, Bob Wigley studied Law and Architecture and managed to play cricket for South Australia. His wild pranks as a young man had already made him somewhat of an embarrassment to his family. In 1893 he was prudently sent to rusticate in McLaren Vale. He planted the vineyard in 1894 and made his first wine with Alec Johnston in 1897. By 1901 he was the owner of one of the best wineries and vineyards in the district with 100 acres under vines and 15 acres under currants.

Stylistically, Wirra Wirra established a long and distinguished history for itself of producing wines with great elegance, balance and complexity. "Mr. Thomas Hardy says of all those he ever had under him, no town man worked harder than Mr. Bob Wigley who was at Bankside for 18 months learning winemaking. Bob Wigley died in 1924 having contributed much to the life of the district and having made many fine wines which in the main found their way to England, having been shipped by Burgoynes of London. After 1936 the original 240 acres were sold by his family and eventually the cellars with only 7 acres left fell into disuse. It was not until late 1969 that the winery, by then virtually a derelict building, and the surrounding 7 acres of land was re-established.

Cousins Greg and Roger Trott purchased the holding from Vern Sparrow, son of Wigley's foreman Jack Sparrow. Roger Trott, an accountant, has a property at McLaren Flat, Moray Park, and Greg's vineyard. Bethany, is just across the road from Wirra Wirra, while Scrubby Rise, part of the original Wirra Wirra, is immediately in front of the cellars. Before they bought the old, ruined winery, Greg spent five years with Southern Vales Co-operative looking after growers interests and in his own words, had become familiar with the rudiments of winemaking.

Like many of the McLaren Vale winemakers, these men were helped by their friendly rivals, a feature of the district. Good use was made of Oenological Services of McLaren Vale, a winemaking advisory and laboratory service led by Peter Klose and started by David Hardy, Alex Johnston and Colin Kay. In a gesture worthy of the wonderful Wigley, the two cousins Trott spent a frantic five weeks gathering equipment from all over the state. Then, armed with an ancient wooden Bagshaw crusher, a pump and an old French press, they made their first wine in the open air amidst the ruins.

In its modern day, Wirra Wirra has hosted a vast and eclectic array of winemakers, cellar hands, drifters and vagrants each vintage. One of the most interesting things about February, is the influx of a range of recalcitrants from all over the world. Yanks, Poms, Krauts, Frogs, Kiwis, Queenslanders, the occasional Aussie and more, all converge on the cellars to pick, pump, drain, crush, press, and massage the fruit that comes in from the vineyards. There is now nothing quirky about the design of the winery, which is in its third stage of development. Although functional and technologically advanced, the cellars retain a soul. This is largely due to the spirit of the tribe that work there.

Although McLaren Vale is at the heart of everything Wirra Wirra, diversity in fruit styles also plays a part in viticultural & winemaking philosophy. Other regions act as a source of fruit, with the Clare Valley contributing to Hand Picked Riesling. Coonawarra fruit is a major component of The Angelus, whilst Chardonnay and Sauvignon Blanc are based purely on Adelaide Hills grapes. Petrucci's, Paxton, Parkinson, Trott, Gower et al make up a stable of carefully selected growers who are inevitably part of the Wirra Wirra tribe. Scrubby Rise (which is flat and bereft of Scrub), Nocowie (named by Trott's father who disliked cows), Chook Block (next to Greg's old Chicken Sheds), 73 Block (one guess only), Finniss River & House Block contribute the majority of the best fruit year after year.
