Aerope is the Two Hands estate flagship, significantly a pure Grenache wine, representing the very finest old vines Barossa Grenache. Aerope is assembled annually from a chosen few of the most exceptional barrels, vinified from grapes that are hand picked off an eighty year old, dry grown vineyard on Radford Road, near the ancient Barossa winegrowing hamlet of Greenock.

Grapes are all hand picked, most are crushed and destemmed into five tonnes open top fermenters, a quarter of the fruit is processed as whole bunches. After several days of cold maceration the musts are allowed to warm for vinification. Throughout the peak of ferment, batches are pumped over a minimum four times daily to extract colour, flavour and tannin. After a fortnight on skins, each fermenter is drained off, skins are pressed and returned to the free run. Batches are then racked to a selection of well seasoned French oak hogsheads for malolactic and seventeen months maturation.
 
Bright red with subtle brick red hues. Fragrant and inviting, full of red berries, bright Asian spice, lavendar, savoury charcuterie and great steely minerality. The palate is highly refined, an extremely attractive entry of red berries, lavendar and creamy rosewater. The juicy mid palate tightens up to the late palate finishing with fine tannins and mouth watering charcuuterie and savoury mint notes.

After the crushing of grapes and completion of ferments, most red wines are filled to oak, it is here that the ageing barrels must be topped up from time to time, as a portion of the stocks evaporate into thin air. It's known in winemaking parlance as angel's share. A wine of great personality, personable and charismatic, the very best of McLaren Vale in every way, Angels Share articulates the more vivaciously ripe and upfront style of Aussie Shiraz.

Two Hands are innovative and unafraid to think outside the square. Two Hands concentrate their efforts on sourcing the best fruit from the finest Shiraz vineyards in Australia, working closely with the growers. Grapes are crushed into large, open top fermenters. During the peak of activity, batches receive regular pumpovers thrice daily for the extraction of colour, flavour and tannin. After sixteen days on skins, the free runs are drained off, skins are pressed and returned. After a day's settling the wine is racked to barrel for malolactic. Matured twelve months in a selection of seasoned and new French and American oak puncheons and hogsheads. Angel's Share is bottled without fining or filtration.
 
Deep, concentrated black with purple rim. Big McLaren Vale nose of ripe fruits, blackcurrants and cherry notes, freshly ground coffee, dark chocolates and mint. A layered palate, fresh mouthfeel, the tannins are quite firm, balanced by good weight of fleshy fruit. The mid palate shows terrific focus, the finish balanced by impeccable tannin and acid structure, resolving on a note of excellence, precision and persistence.

A pure, flagship Cabernet Sauvignon from a mature single vineyard on Radford Road in the Seppeltsfield sub-district of the Barossa Valley. The Two Hands wineworks at Marananga was designed specifically for small batch production of the very best parcels of fruit. Very occasionally, the Two Hands isolate a block of vines that are earmarked to be handled separately, and vinified into a tremendous Barossa Cabernet. Length of palate and great persistence balanced by excellent depth is the hallmark to the subtle but complex Aphrodite.

A highly specialised Shiraz producer, Two Hands are inspired by a tiny quantity of the most superlative Barossa Cabernet to create an extremely limited small batch wine. Crushed and fermented in five tonne open top fermenters with regular pump overs, three daily during peak fermentation to extract colour and tannin. Following seven to twenty one days of maceration, the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel for malolactic fermentation. Extended maturation for a period of twenty two months in 100% new French oak Taransaud hogsheads. Minimal fining and unfiltered.
 
Deep, almost impenetrable black in the glass. Fully charged aromas immediately spring from the glass, plum and lavender, mineral and earth, cedar and grilled meats all enveloped around classic cabernet complexity and purity. The palate delivers right from entry with dense and plush red fruit flavours bursting forth amongst polished but fine tannins and refined acidity.

The best possible Shiraz wine from the most prized vineyards. Crushed, destemmed and fermented in five, seven and ten tonne open top fermenters with regular pump overs up to three times daily during peak fermentation for the extraction of colour and tannin. Following seven to twenty one days of maceration on skins the free run juices are drained to tank as the skins are pressed. Both the free run and pressings are blended to tank and then racked to oak after twenty four hours. Malolactic fermentation takes place in barrel. Ares is treated to a minimal fining and is bottled unfiltered. Ares reposes twenty three months in oak, the final year is spent in completely new French hogsheads.
 
Deep red and black with magenta rim. Bright and intense, volumes of rich berries, plums and maraschino cherry. The aromas are continually evolving, also bringing cedary spice, subtle lavender, bitter chocolate, tar and fudge. A palate with great depth of flavour, a wine of finesse. Juicy plums and blueberry dominate early to mid palate, then underlying cedary chocolate notes emerge carrying the wine through, tightening up again to a focused core of fruit, tannins and spice.

The Two Hands are within easy reach of the finest harvests from the Barossa's most wonderful old vineyards. Bella's Garden is assembled after a rigorous determination of the best barrels of maturing Two Hands Barossa Shiraz. Densely coloured, almost black in colour, it exudes powerful bouquets, ripe plum and succulent blackberry flavours, laced by wisps of cedar and spice.

A Mediterranean microclimate surrounds the Two Hands vineyards, forming the perfect conditions for growing and ripening the finest quality fruit, to be vinified into generously flavoured, full bodied, flagship Barossa Shiraz. Grapes are de-stemmed, crushed and vinified in a mix of open top fermenters, pumped over thrice daily during the peak of ferments, to extract colour and tannin. Juices remain a fortnight days on skins before free runs are drained and pressings returned. After a day of rest, batches are filled to barrel for completion of malolactic, racked off lees, tidied up and returned to oak for eighteen months, followed by minimal fining and an unfiltered bottling.
 
Deep red with black/ purple hues. Aromas are vibrant and focused, the characters are continually evolving. Notes of red currant and cherry and subtle lavender, then chocolate and char, hints of creme anglaise, followed by spice, earth and rosemary. Bella's Garden is full of rich red fruits, cloves and earthy notes, supported by fine tannins and elegant oak. Generosity of fruit remains focused as it tightens to a long balanced finish.

Batches are de stemmed and crushed into open top fermenters, a portion are added as whole bunches, Shiraz is pumped over three times daily through the peak of ferments, Grenache and Mourvèdre are cold soaked and lightly plunged. Components spend a fortnight on skins, all pressings are rack and returned to the free run, some barrels are treated to extended lees contact. Batches are filled to a selection of older French oak foudre, hogsheads and puncheons for a year's maturation.
 
Bright red colour. Bright raspberry bouquet, dark cherrie and rose petal, jelly crystals and the sweet savouryness of deli meats. Bright and vibrant on the palate, jellied fruits, cherry drops and strawberries cream, rose water notes, a lovely interplay of creamy/ leesy textures, the gentle, chalky tannins run the length of palate, finishing with hints of white pepper, aromatic cedar oak and hints of smoked meats.

A sense of urgency is essential to the creation of this moreish wine, time from vine to bottle is only a few weeks weeks. Italian in style, la Dolce vita through and through, fashioned from parcels of hand selected White Frontignac grapes, Brilliant Disguise is a low alcohol, slightly spritzy style endowed with sweet, lush fruity flavours. Its lovely density and purity of fruit is rarely found in top flight Moscato, cleansing and rejuvenating the palate for the next snip.

From old, white Frontignac Barossa vines, between thirty and fifty years of age. Once sidelined as a victim of changing trends, the resurgence to bright and fresh Moscato wines is now saving the varietal from certain extinction in Australia. Brilliant Disguise, crafted exclusively from the white Frontignac or Muscat grape, is always the earliest to be picked, first to be vinified and bottled each vintage. The essence of the Moscato style requires special efforts to retain freshness, it is pressed and fermented, filtered and bottled in quick succession. The fruit is picked early in the season, at ripe, healthy levels of baume, pressed and settled before a brisk fermentation, retaining its delightful fruitiness. Alcohol 8.5%
 
Light straw in colour. A very lively bouquet of lemon zest and pineapple, lychee and guava, persimmons, tropical fruit juice and fresh sherbet. Lifted and inviting, full of floral notes, rosewater and sherbet with subtle grapefruit and talc. The palate is sweet and thick and then gains energy as the bubbles and acidity give life to the thick layer of fruit along the palate. The finish is very clean, whilst acid provides great foil to the sweetness.

Michael Twelftree and Richard Mintz established Two Hands with the aim of making the best possible Shiraz wines from fruit grown to good vineyards. Their intention was and still is to show the diversity of Australian Shiraz by highlighting regional characteristics and allowing the fruit to be the primary feature of the final wine. By working closely with growers and focusing on small batch handling, Two Hands are able to identify parcels of old Barossa vineyard Shiraz which can be assembled into an exceptional wine of salient varietal definition.

Gnarly Dudes is fashioned from fruit picked off mature sites in Barossa Valley’s western ranges. Individual parcels of Shiraz from distinguished Barossa vineyards are separately fermented in a mix of three, five, seven and ten tonnes open top vessels over the course of a fortnight, pumped over three times daily. Pressings are combined with the free run and settled for several days before filling to oak for completion of malolactic and several rackings. Matured in in aselection of seasoned and new French and American oak barrels, puncheons and hogsheads for a year, batches are kept separate until assemblage.
 
Bright crimson, vibrant purple hues. Black cherry nose, blackberries and fresh lavender, dark chocolate pastry crusts. Vibrant palate, bright berry notes dance across the palate, medium to full bodied, richness of fruit balanced by bright refreshing acidity, tannins are prominent but seamless, red licorice finish, lavender and dark chocolate, creamy textures from lees contact.

Lily's Garden is crafted without compromise from fruit grown to superior vineyards within the Two Hands estate portfolio. The palate is filled with rich flavours of raspberries and black pepper spice, liquorice allsorts and plum. The finished wine is an unctuous Shiraz with striking dark colour and cryptic aromas.

The Two Hands winemaking team can demonstrate an innate capacity to capture the terroir of each vineyard and preserve the vital characteritics in every wine. A number of individual vineyard parcels are crushed into a mix of three and five, seven and ten tonnes open top vessels. Ferments are pumped over thrice daily throughout the peak of activity to extract optimal colour, flavours and tannin. Batches are pressed, the free runs and pressings are all returned and racked to barrel for completion of malolactic. Components are matured eighteen months in a combination of seasoned and new French oak puncheons and hogsheads. All parts are kept separate and assembled just prior to bottling.
 
Deep dark red. Nose of spiced plum, blueberry pie with hits of musk stick, warm vanilla and pain grille. Full bodied palate with lashings of spices and plums, blueberry jam and milk chocolate. Tannins are round, bold and chewy then tighten through the finish. Hedonistic in style with complexing notes of mocha coffee beans, vanilla pod and clove. Incredibly long and persistant through the finish.

The 'two hands' are Michael Twelftree and Richard Mintz who formed the company in 1999 with the clear objective of making the best possible Shiraz

Michael came to the wine industry from a construction background having spent years attending wine tastings and collecting the wines of the world. In 1998, he established his own Australian wine export company and after three successful years of selling other people's wine, he and business partner Richard Mintz decided to start their own operation.

Two Hands

From day one, Michael's role has been multi-faceted. He heads up the marketing side of things and is constantly nutting out new ways to keep the ideas fresh. He is eagerly involved in all aspects of the production process and has successfully overseen the construction of the new Two Hands cellar door and winery in the Barossa Valley at Neldner Road, Marananga.

Richard was a disenchanted chartered accountant by training with an M.B.A. from Adelaide University whose passion for wine started when he was appointed Chief Executive of one of Australia's leading cooperages. In early 2003, Richard left the cooperage to devote himself wholly to Two Hands Wines. He is active in all areas of the business from handling many of our long term projects to supporting international distributors, liaising with growers and even getting his 'two hands' dirty during vintage.

From the beginning the wines were very well received at home and abroad with a healthy stream of reviews, culminating in 2004 with Robert M. Parker pronouncing Two Hands as 'the finest negociant operation south of the equator'

In 2000 they started with just 17 tonnes of fruit from the McLaren Vale and Padthaway wine regions. The heart of the operation is still Barossa Valley based, the cellar door and winery are located in the sub district of Marananga. Opened in December 2003 the cellar door has already come to be regarded as one of the highlights of the region with its contemporary interior design and commitment to providing guests with an educational and personal wine experience. The Marananga winery was officially opened in November 2004, designed specifically for small batch production of the very best parcels of fruit.

The Two Hands are innovative and not afraid to think outside the square as there are many different steps and countless hours involved, from vineyard, through to winemaking, tasting, blending and maturation in order to make consistent, quality wines. The Two Hands winemakers concentrate their efforts on sourcing the best fruit from the best Shiraz vineyards in Australia, working closely with growers on achieving the full potential of each individual site.

This is achieved by sourcing the best parcels of fruit available from six prime regions within Australia. Every parcel of fruit is handled separately, no matter how small, from crushing through to fermentation and oak maturation to ensure complexity and personality in the finished wines. Two Hands allow fruit to be the primary feature of all our wines with oak playing a supporting role.
