Clairault are all about taking care of the little things to build a much greater wine, vineyards are all managed like a wildlife sanctuary and the vinifcations are treated as gently as one can. Berries must be only barely split, to iintroduce just the right amount of tannin while retaining a press of the purest juices. The most exquisite parcels Cabernet Sauvignon, a touch of Cabernet Franc for interest and finesse, are delicately fermented before eighteen months of age in an extravagantly high proportion of new French oak, the fruit of Margaret River at its finest, graceful and most eloquent.

Deep crimson black. Aromas of cherry blossom, mulberries and aniseed, cedar and cigar box, blueberries and cassis. Highly focused, west coast Cabernet of amazing precision and drive, fine grain, mouth coating tannins in support of the dark fruit core, held in perfect balance by genteel acidity and perfectly framed oak, a luscious finish with yet more cherries and simmering French vanilla pudding oak.

Clairault was the sixth Margaret River estate to plant vines, it remains one of the oldest privately owned operations within the premier Wilyabrup appellation. The pristine, undulating property, situated less than four kilometres inland from Cape Clairault peninsula and 120 meters above sea level, is endowed with bountiful creeks, natural springs and some of the oldest native forests in the southwest. The Clairault team take great care of local flora and fauna, mother nature reciprocates, in the form of intensely flavoured Chardonnay with refined balance and exquisite style.

Bright straw yellow hues. White pears, jasmine and brioche, subtle wet granite notes. Oyster shell and white pear, a medley of texture and flavours, over a delicate yet firm core of structured oak and ripe fruit, the palate remarkable for its purity, stonefruits and nectarine have never been crisper and fresh, a juicy length of complexity, resolving on a lasting, textural mineral finish.

Clairault Estate is situated approximately ten kilometres south of Yallingup, within the superior Wilyabrup dress circle of Margaret River. The property contains four dams, forty hectares of grazing land and eighty of remnant bush. The vineyard itself has been cultivated with a commitment to local flora and fauna, it yields harvests of small but intensely flavoured grapes. Merlot and Petit Verdot are assembled around a solid backbone of Cabernet Sauvignon, a stately wine of penetrating bramble fruit characters and refined, tensile tannins.

Bunches of Cabernet Sauvignon grapes are de-stemmed and each berry is split, to ensure minimal degradation and encourage fresh, clean flavours. Merlot is crushed to fully expose the delicate flesh, for a more refined and elegant textural development. A fortnight of cool, gentle vinification on skins, allows for slower, more controlled extractions of tannin and flavour. Ferments are pumped over thrice daily over the course of a fortnight and judiciously backed off as the juices evolve into wine. Upon completion, batches are gently pressed into a selection of French oak barriques for ten months maturation, followed by clarification and the final assemblage.
 
Bright garnet colour. A compelling bouquet of vibrant cherry skin and dark berry characters , mintiness, dried herb and vanilla. A bold palate driven by blackberry and mocha oak, fleshy plum sweetness followed by a herbal savoury length. The tannins are fine grained, almost silky in texture, in fine balance before a dark chocolate allspice finish. Match with lamb, steak or eggplant, a superb accompaniement to rare, gamey duck.

Margaret River makes mighty Cabernet but Clairault make a priority of gentle winemaking. Parcels are cannily crushed so that each berry is only, barely just split, affording the ferments minimal berry degradation, encouraging the retention of fresh, clean varietal Cabernet characters in the finished wine. Vinified on skins for optimal extraction and treated to a timely ten months in nothing but the finest French oak, a vivid articulation of Margaret River Cabernet, brimming with dark blue currants and cassis, its refined minerality resolving on a refreshing glace cherry finish.

Clairault Margaret River Chardonnay

Biological farming is a passion at Clairault, incorporating a mix of organic and conventional farming techniques which place a strong emphasis on soil biology. The achievement is high quality Chardonnay, such low intervention techniques ensure that only the healthiest grapes are grown, achieving optimum flavour for in the final wine. Fruit is picked early morning and pressed, a portion as bunches, oak fermented in a high proportion of French barriques, partial malolactic and nine months maturation, stirred and topped fortnightly before the final assemblage.

Pale yellow hues. The bouquet offers ripe fruits and white pear, baked nectarine flan, cinnamon, creme brulee and limes. Rich and powerful palate entry, sweet melon fruit surrounded by a fine mesh of oak tannins, a long creamy finish, lingering lime and stone fruit flavours, awash in vibrant natural acid. Perfect match to guinea fowl or marron a la armoricaine.

Margaret River Merlot, gently crushed and infused on skins a judicious four hours, for optimal uptake of rakish pink hue and rose petal perfumes. Treated to a long cool ferment on gross lees at brisk temperatures, to lock in all the plummy vivaciousness and cherry ripeness of good Merlot, promptly bottled to preserve freshness and seal in the winsome aromatics. Aromas of rhubarb, cerise et frais de bois, punnets of summer berry fruit, a voluptuous entry of revitalizing raspberry sorbet, apple and blackcurrant, a juicy, refreshing finish.

Clairault are one of the pioneering vineyard wineries of Margaret River. Their aim has always been to create balanced, well structured wines which reflect a unique terroir and the outstanding quality of fruit from a mature site. Semillon in particular is a stand out performer, vinified alongside parcels of intensely aromatic Sauvignon Blanc, into a crisp, clean wine of exciting mineral fruit character, the classic dry Margaret River white, offering immense drink now appeal.

Clairault implements a non interventional approach to winemaking, focusing on aromatics, picking on the basis of flavour rather than fruit sugar. Fruit picking occurs over several days as each block achieves optimal ripening, harvested throughout the cool of night and chilled. Parcels are cold pressed, settled and vinified to a variety of techniques, a fifth is fermented in French oak barriques for richness and texture. A unique strain of yeast is employed to enhance the passionfruit and gooseberry of Sauvignon Blanc. Upon completion, batches are held for a month on gross lees while gently treated to battonage before bottling in July.
 
Pale straw hues. Bright bouquet, newly cut grass characters, guava, grapefruit and orange blossom notes. Pleasingly dry, its vibrant acidity, driven by crushed lime, followed by white pear, lemongrass and dried apricot flavours. Time in French oak has infused a lingering, creamy finish accompanied by subtle minerality.

The 230 hectare property contains four dams, approximately 85 hectares of remnant bushland, 40 hectares of grazing land and the upper reaches of the Gunyalgup, Quininup and Big Brook which joins the Wilyabrup Brook. The remnant bushland comprises jarrah, marri and banksia open forest with small areas of peppermint closed forest found near the creek lines.

At the 2009 London International Wine Challenge, Clairault’s flagship 2005 Estate Cabernet Sauvignon won Gold and Double Trophy for Best Cabernet in Australia and Best Western Australian Red Wine.
