Clare Valley's original winery, established by the Jesuits in 1851, Sevenhill still make all their wines from fruit grown to seventy two priceless hectares of estate vineyard, the ancient wineworks are nestled amongst the vines, very near the historic St Aloysius Church. Today's approach to winemaking is all about the encouraging harvests of the most intensely flavoured fruit off an endowment of low yielding vines, followed by traditionally small batch, old world winemaking techniques to extract rich opaque flavours and a measure of fine silky tannins.

Clare Valley Cabernet is renowned throughout the world of wine for its elegance, delicacy and finesse. Sevenhill can count on harvests from the oldest vines in Valley Clare, established by the Jesuits Society in 1851, they are still managed by a dedicated viticultural team who treat their land with a reverence worthy of the seven hills of Rome. Real clergy, crafting true wine, aged under one of the nation's most ancient cellars, Inigo is a richly coloured wine, redolent with lifted eucalypt berry perfumes, supported by pious, graceful tannins and a robe of the most reverent oak.

Inigo is made from fruit grown to a vineyard with gentle north facing slope directly behind Sevenhill's St Aloysius Church. The soils are predominantly red to brown loam over weathering slate or siltstone, the well drained qualities contribute to naturally consistent low cropping levels and fruit of great integrity. Grapes are picked in seperate blocks, crushed and treated to vinification in a collection of open slate vats over the course of a fortnight. A carefully managed series of regular pumpovers is vital to capturing flavour and colour. Upon completion, batches are pressed into a selection of seasoned and new French oak barrels for eighteen months matuation. Alcohol 14.0%
 
Dark, black cherry hues. Prominent bramble berry notes, violets and cassis to the bouquet, cedar and dark blue fruits. Powerful red currant and mocha/ spice carry through the palate, intense blackberries and black olive flavours, soft tannins allow the prominent fruit to shine, a lingering finish of evolving sweet berry flavours on a length of pliant licorice tannins.

Sevenhill Inigo Merlot

The old vine D3v14 clone planted on two blocks at Sevenhill is not known for great concentration, yet Sevenhill produces Merlot wines of greater colour, palate structure and character than most. We see Merlot's finest qualities of violet perfume and silky texture coming from the uniform but not rich, clay loams of Sevenhill's vineyard. Secondly, it's all in the timing. The aim is to encourage all berries to ripen simultaneously and evenly. A fine accompaniement to osso buco or veal, Inigo makes the most of a slow cooked leg of rosemary garlic lamb.

Why is Sevenhill Merlot so sensationally different? Firstly because Merlot is a sook! It needs a certain soil type to produce its best, not too rich or too poor. Grapes are crushed into Sevenhill's century old slate fermenters, a perfect size for allowing the soaking skins to give up their character into the wine. The must is pumped over or gently plunged daily to gently extract colour and tannins. Following a traditional basket press, the wine is transferred into a combination of new and older French and American oak hogsheads for eighteen months maturation.
 
Deep ruby colour, crimson hues. Primary fruit characters on the bouquet, violets and plum, blackcurrants and spice in the classic Merlot way. A rich, smooth palate provides delightful balance between smooth dark cherry and blackcurrant flavours. Gentle tannins and lingering cedar spice persist on the long and persistent finish.

Sevenhill are a quiet achiever, softly spoken artificers of Clare Valley's finest. Riesling develops so much charm as it grows in the vineyard, that if it's picked at the right time, the wine is virtually made. Riesling's desire to wear her heart on her sleeve still means that she can be sensitive, so the vinification must be compassionate. Amongst the propitious terroirs of Sevenhill, vines yield fruit of refined minerality and savoury edge, the richer, red soils are higher in nutrients, all the team have to do is protect and maintain the character of fruit.

Riesling is planted on four separate vineyard blocks, each with different soils, a combination of silty stone/slate and richer, red loam. The silty stone and slate soils are older and less fertile, they offer ideal chemistry for wine grapes. The vines produce leaner characters, the wines show minerality and a more savoury edge. The richer, red soils are higher in nutrients, so the vines don't have to battle quite so hard. All grapes are gently pressed, taking great care not to allow oxygen to steal the flavour. Juices are kept very cool, inoculated by choice yeasts and fermented to dryness at temperatures around 12C. Individual vineyard blocks are all kept separate until completion and the final assemblage.
 
Pale straw colour with a tinge of green. Highly aromatic, waxy orange blossom predominant, nose displays the character and charm of pure, elegant Riesling. The palate is tight and lean, showing prominent citrus flavours followed by a minerally, dry finish, long and crisp.

Sevenhill conjures up visions of Clare Valley idyll, serene pastoral vistas and ancient cellars full of patiently maturing Shiraz wines. One of our nation's great viticultural endowments, Sevenhill were the first ever cellars to be established in Valley Clare. Winemaking is still carried out under the direction of the Jesuitical Manresa Society, sacramental altar wine still accounts for a third of the estate's production. Inigo is an intense yet balanced Shiraz with the requisite character and charm to articulate the grace of vines up to 140 years of age.

Sevenhill retain some of the Clare Valley's most distinguished sites, the viticultural team are devoted to the nurture of the precious vines. There are several open top fermenting vats at Sevenhill, made from large slate slabs around a century ago, mined from the nearby town of Mintaro, they are irreplaceable. The size of these old world vats is perfect for Shiraz, a large surface area of wine in contact with the fermenting skins gives the best extraction of colour and flavour, while permitting the heat of ferments to escape. Each batch is plunged by hand and manually basket pressed, followed by maturation in a selection of seasoned and new French and American oak barrels. Alcohol 15.2%
 
Dense, purple black colour. An aromatically spiced, pepper and pencil oak nose, elegant perfumes of cedar, menthol and mint. The palate shows a generous expression of fleshy, ripe plum fruit flavours, dark cherry and cassis. Full bodied, the finish resolves on a length of firm, soft tannins, seasoned by delicate fragrant, spicy notes.

St Francis Xavier is really made in the vineyard. Fruit is sourced from a prized parcel at Sevenhill that captures the very essence of Clare Valley Riesling. St Francis Xavier is grown and made with great devotion to the preservation of flavours nurtured in the vineyard. The highly regarded clone from Geisheim is planted to a protected site, a block referred to as Herr Weikert. Great care is taken to settle and bottle the wine quickly, ensuring the vineyard's signature flavours are captured. It's the aim each year to release St Francis Xavier after twelve months in bottle, just as the glorious fruit characters begin to emerge.

Sevenhill Cellars are nestled among the vineyards close to St Aloysius Church. Herr Weikert Block's red brown loam soils and cool, sheltered aspect are key elements in achieving the balanced growth and fine Riesling attributes of St Francis Xavier. The winemaking focus is on preservation of pristine fruit characters that develop during ripening of the berries. Grapes are picked during the coolest part of day, gently pressed and fermented at a very low temperature. Great care is taken to settle and bottle the wine quickly, ensuring the vineyard's signature flavours are captured.
 
Citrus green hues. Concentrated elegant perfume indicates the finesse of the St Aloysius style. In the mouth, the wine combines the fresh zest of citrus flavours with the toasty, nutty character that comes from bottle age. Mouthfuls of citrus fruit combine with enticing minerality, assertively astringent and a touch of lime, talcy yet pleasingly drying.

The Jesuits Society of Jesus migrated to Australia from Austria in 1848 seeking a life free from religious and political persecution

They settled at a site called Open Ranges in the beautiful Clare Valley and established Sevenhill, the oldest existing winery in the Clare Valley. Initially the main purpose of the cellars was to provide sacramental wine for religious use and this has been ongoing. Sevenhill Cellars now produce white, red and fortified wines as well as sacramental wine.

The Jesuits renamed Open Ranges Sevenhill because of their hope that the immediate area would become a centre of Catholicism for the North - another little Rome with seven hills. They even named the stream that flowed through the property The Tiber. Sevenhill Cellars are today nestled among the vineyards close to St Aloysius Church and feature a well tended grassed picnic area with tables, seats and shade trees. Sevenhill winery produces all its own fruit on 72 hectares of vineyard.

Twenty varieties of grapes are grown yielding an average annual crush of 450 tonnes. The wine is completely processed on the property including the bottling of the finished wine (35,000 cases per year). This is a far cry from the pioneering days of the first Jesuit winemaker Br Schreiner. He and Br Schneider built a wine press in 1863 capable of pressing a formidable load of 4 buckets of grapes at a time!

The production of altar wine today accounts for 30% of the winery's production. Made in the style of a sherry and in conformity with the requirements of Canon Law is sold to all Christian denominations in Australia for use in religious services. It is exported to India, Indonesia, Papua New Guinea, Singapore, Guam, Borneo and Pacific Isles.

In the history of Sevenhill Cellars, there have been 7 Jesuit Brother Winemakers. In September 1851 Br Schreiner bought some vine cuttings from Bungaree Station and planted them on the left hand side of the present road to the winery. This planting marks the beginning of Sevenhill Cellars and makes it the oldest winery in the Clare Valley. These vines were planted initially to meet the need for altar wine.

Brother John May SJ, Jesuit Winemaker Emeritus has been with Sevenhill Cellars since 1972. He was instrumental in building the winery up to the technologically advanced state of today. Winemaker Liz Heidenreich joined Sevenhill in 2005. Adelaide born and educated, 34-year old Liz has a wealth of knowledge and experience gained in Australia and overseas. "One of the historical treasures of Australia; the oft-photographed stone wine cellars are the oldest in the Clare Valley, and winemaking is still carried out under the direction of the Jesuitical Manresa Society, and in particular Brother John May.
