One of the main Premiers Crus on the left bank of River Serein, the clay limestone Climats of Beauroy extend beyond Chablis and reappear in several surrounding precincts. William Fevre retain a single hectare of the thirty seven at Beauroy, albeit from the superior sub appellation of Les Troësmes, one of the first terroirs to have been classified as Premiers Crus. The Chablis of Les Troësmes demonstrate a conspicuous measure of finesse and are renowned for their capacity to evolve gracefully.

From two precious hectares of a unique sub appellation within the distinguished Bougros Grand Cru. At the very bottom of the twelve hectare Bougros, lies a steep slope of south facing vines, grown to precipitous and challenging angles of thirty degrees or more, which enjoy the fullest exposure to the sun's rays. The auspicious vines on Cote Bouguerots are planted to shallow clay and pebble soils, which reduce vigor and limit the yields, achieving the most complex, big boned and suave styles of Chablis.

Light yellow hues. Fully complex bouquet, intense mineral notes, preserved citrus and fruit notes, supported by oyster shells, rockpools and dried floral. Wiliam Fevre are the largest retainers of Cru Bougros, operating six of the twelve hectares of vine, grown to predominantly clay soils which are somewhat deeper than those of sub Cru Bougros Cote Bouguerots. This distinguished climat lies at the very western end of the Cote des Grands Crus, at altitudes ranging from 130 to 170 metres, on rather deep marl and clay terroirs on a southwest exposure. Cru Bougros produces rich and characterful styles of wine, articulate of Chablis with a measure of elegance and finesse.

William Fevre Les Lys 1er Cru

The soils of Les Lys are a distinguished sub appellation within the greater Les Vaillons. Gently sloped soils which are higher in clay deposits than the surrounding terroirs of Chablis, yield a noticeably elegant style which appealed to French royalty. The exclusively hand picked fruit is treated to the traditional Burgundy style of barrel ferments in well seasoned oak, followed by a year or more maturation on fine lees. Her very fine perfumes and charming palate make Les Lys the perfect accompaniement to john dory fillets or dover sole.

The vines of Les Lys are planted to a unique clay slope on ancient Kimmeridgian subsoils. Grapes are all picked by hand into small 13Kg cases followed by a closer scrutiny over the sorting table. Bunches are treated to a brief 1½ to 2 hours pneumatic pressing for gentle separation of gross solids. Juices are lightly settled for the retention of light solids, half the batches are filled to a selection of well seasoned oak barrels for a completely natural course of ferments and spontaneous malolactic. The balance is vinified in fermenters to retain freshness of fruit character and character of the vineyard. The finished wine is matured for a year or more, partly on fine lees to infuse textural complexity.

Les Preuses is one of only seven Chablis Grand Crus, the elite of the elite. Viewing the arc of golden Grands Crus from the banks of Le Serein, Les Preuses is the northernmost, the first on the left as you pan across the slope of great Chablis vineyards. Legend recounts an ancient Roman road which ran below the property, it is now source to the most long lived wines due to its highly compacted clay rich soils. William Fevre retain two and a half inestimable hectares, almost a quarter of the entire appellation, a full bodied Chablis, yet elegant and refined.

William Fevre Mont De Milieu 1er Cru

Mont de Lieu is a gentle rise of land which defines the border between the great vineyards of Burgundy and those of Champagne, delineated by a stone marker at its summit. The neighbouring vines of Mont De Milieu comprise over thirty hectares. William Fevre own and operate a mere half hectare, established 1963 to a doubly auspicious exposure south to southeast, it enjoys more sunshine and a warmer growing season than most other Premier Chablis Crus.

Montmain lies to the south of the greater Chablis region, one of the larger and more salubrious vineyards, at a hundred hectares on the left bank of the Serein. Many of the more prestigious negociants have significant holdings, Domaine William Fevre retains less than two hectares. Planted to a unique terroir of very stony kimmeridgian soils, clay, chalk and fossilised oyster shells, the vines at Montmains yield an evocative wine of pronounced mineral aromas, extraordinary power, ageing potential and finesse.

A family that has been in the Chablis region for more than 250 years, William Fevre's father was already a great winemaker

His son William founded the Domaine de la Maladiare and announced his first harvest in 1959. For many years, William Fevre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skilfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal, to finely express the most subtle variations in the greatest Chablis crus.
