Evans & Tate's vineyards produce ripe, intensely coloured grapes with fresh, varietal flavours and soft textures. Prior to picking, the blocks are tasted every three days to monitor flavour, colour and tannin development. Once ready, parcels are picked in the cool of the night to ensure fruit reaches the winery at the coolest temperatures. The fruit is destemmed, followed by a three day cold soaking in fermenters at 5°C to achieve a fruit driven, aromatic wine with soft, lush textures. During the fermentation, seeds are removed and thoroughly aerated every twelve hours for five days, pressing divided the skins and juices into separate tanks. Matured in French oak for twelve months followed by a filtering. Alcohol 14.5%

The lead up to the 2008 vintage was ideal with warm, dry conditions over Christmas and New Year. Harvest was earlier than previous years due to this warmer weather. The Margaret River’s renowned cool summer nights and sea breezes ensured that the fruit ripened beautifully at lower baume with excellent natural acidity, perfect for the Moscato style. Harvested in the cool of the night to retain freshness, the fruit was lightly crushed with free run juice separated and fermented in a similar style to white varietals. A floral yeast was introduced and the ferment held at a cool 15°C resulting in fresh, bright fruit aromas in the final wine. An assemblage of fine fruit grown to choice vineyards located along the sultry maritime mesoclimes along the Margaret River. Each parcel of fruit is picked separately during the coolest part of the night. Following harvest, grapes are de-stemmed, the Shiraz is cold soaked in rotary fermenters, Cabernet into static fermenters, which assists in the prevention of excessive tannin extraction. Batches are completely aerated throughout fermentation and pressed off skins to separate tanks for the completion of ferments. Once dry, each batch is racked separately off lees into a combination of new and used French and American oaks for up to a year of maturation. Approx 14.4%
 
Deep ruby red colour with a dark purple rim. The Shiraz contributes ripe mulberry and plum aromas with a lovely peppercorn and spice lift while the Cabernet parcel assimilates perfectly and adds a layer of complexity with redcurrant, plum and a fresh leafy note. Batches of the best fruit showing intense varietal flavours and high natural acidity at lower baumes levels are selected from the finest Margaret River vineyards. Parcels of Sauvignon Blanc purposefully grown for the Classic White style receive an enzyme addition in the vineyard to encourage flavour and aroma extraction from the skins prior to crushing. On completion of fermentation the parcels are sulphured, chilled and coarse clarified to avoid extended contact on yeast lees. Some components are kept on light yeast lees for a short period. The batches are then assembled, followed by a fine earth filtration. This minimal handling creates an intensely aromatic and varietally expressive wine. Approx 12.5%
 
Colour is a brilliant pale straw with a fresh green hue. Lifted tropical aromas of passionfruit, lychee and gooseberry, with a touch of nectarine from the Chardonnay. The Evans Tate winemaking team collate batches of fruit from the finest vineyards, harvested at healthy levels of baume, to construct a wine which is the embodiement of Western Australia's renowned affinity for the Cabernet Merlot wine. Bursting with ripeness and intense flavour, the grapes are fermented on skins to extract good colour and to allow flavours to leach from the berries. The wines are worked hard, but careful attention is paid to avoid over extraction of tannins. Following inoculation to select yeasts and vinification in a mix of fermenters, Gnangara is matured in French oak barriques to impart elegance, mellow the tannins and infuse the finished wine with good complexity. Colour is a deep cherry red with violet hues. Clean, fresh and varietal with red berries, plum and soft herbal notes. Engaging aromas of blackberry, reduced stock and earth, hints of menthol and warming cedar oak. A fresh palate that is softly textured with fine tannins, fresh red berries, sweet/ sour cherry, and a hint of roasted coffee bean. As his business career matured, John Tate was able to turn one of his lifelong dreams into reality when he purchased a small vineyard with friend and business partner John Evans. The following year the Tate involvement in the industry became absolute with the purchase of a small winery called Gnangara in the historic Swan Valley just north of Perth. Fruit is harvested in the cool of the night, delivered immediately to the winery, and promptly vinified to capture the vital expressions of the vineyard. The juice was settled, inoculated and fermented in clean steel tanks at a cool temperature to retain varietal freshness. An assemblage of fruit, principally from Margaret River and Geographe has been assembled into a pure varietal wine of intensity and concentration. The cool maritime nights of Margaret River, and the favourable ripening season of Geographe stimulate the vines to develop pungent characters and electrifying acids in the fruit. Grapes are closely monitored and picked block by block to a schedule determined by full ripeness. Grapes are sourced from sites that consistently produce intensely coloured, flavoursome Cabernet and Merlot wines. All parcels are picked at night and cold soaked for three days to maximise colour intensity and bright, fresh fruit flavours. No single achievement has meant more to the Evans & Tate winemaking team than winning Trophy for Best Red Wine of Competition at the International Wine Challenge in London for their Margaret River Shiraz. All fruit is harvested in the cool of night and processed without delay. Vinified on skins in a combination of static and rotary fermenters with a variety of cap management techniques employed to ensure the extraction of optimum colour, tannin and flavour was achieved. Pressing occurs before the primary ferment is complete in a combination of tanks or racking to barrel. Vineyard blocks underwent shoot thinning and bunch removal to achieve perfect vine balance and ripening. Cabernet parcels were harvested at night and cold soaked separately on skins to maximise colour intensity and bright, fresh fruit aromas and flavours. The wine was thoroughly aerated and after initial vinification, each batch was pressed to tank for the completion of primary ferments. Once dry, each batch representing an individual vineyard bock was racked separately off lees into a combination of new and one to two year old French oak barriques where they underwent a short malolactic fermentation. Chardonnay vines fare exceptionally well in Margaret River, as appropriate shading yields intensely flavoured fruit with excellent natural acidity. The fruit is gently destemmed and only the first, free run juice cut was used for the greatest varietal purity and natural grape acids. Each batch, representing an individual vineyard block, is cold settled overnight and rough racked to ensure light solids were included in the ferment. Natural fermentation provides great complexity and texture in the end wine. Each ferment was transferred to a combination of new and one year old French oak barriques halfway through the fermentation where it is treated to a fortnightly lees stirring which adds texture and mouthfeel. Evans & Tate were at the forefront of the Margaret River's rise to international recognition as one of the world's great winegrowing appellations

Like many tales, Evans & Tate's does not begin in Australia. Lionel Teitelbaum was born in 1899 in a village called Nicopol in the Ukraine. Still a young boy when he emigrated to Australia in 1909, Lionel was bounding with confidence and enthusiasm. Such energy translated into a successful family and business life, creating a solid foundation for the future Tate generations. Lionel ensured that his son John enjoyed the benefits of an education as well as an appreciation of cultural pursuits including art, music and wine.

As his business career matured, John Tate was able to turn one of his lifelong dreams into reality when he purchased a small vineyard with friend and business partner John Evans. The following year the Tate involvement in the industry became absolute with the purchase of a small winery called Gnangara Wines, located in the historic Swan Valley, just north of Perth.

The primary aim at Evans & Tate is to make wines that are truly expressive of the best terroirs within the Margaret River region. A state of the art 7500 tonne crush winery, built with this philosophy in mind, is sited at the Lionel Vineyard in Jindong. The winery reflects the professionalism and commitment shown in all areas of the company.

Evans & Tate have invested heavily in cutting edge winemaking equipment, impressive stocks of French and American oak, and the best laboratory facilities. The winery is close to all major vineyard sites from which grapes can be sourced, which gives the winemakers enough freedom to make each parcel of fruit in accordance with it's specific flavour profile and attributes.

The wines of Evans & Tate have consistently merited high critical acclaim and accolades from peers and public alike. Evans & Tate has created an enviable show record over the years receiving numerous trophies and gold medals at both domestic and international competitions. With each individual style of wine, the team looks to achieve intensity of flavour, complexity and regional character.

"From its Swan Valley base 30 years ago, Evans & Tate became the largest Margaret River winery and producer. Having increased its estate vineyard holdings with the establishment of a large planting in the Jindong area, it raised substantial capital by listing on the Stock Exchange. It then turned its attention eastwards, with the acquisition of Oakridge Estate in the Yarra Valley, followed by Cranswick Wines (since sold). It became a casualty of the downturn in the market in 2005, its future direction uncertain, a merger with a US company aborted in March '07. No single achievement has meant more to the winemaking team than the Trophy for Best Red Wine of the Competition at the 2000 International Wine Challenge in London for Evans & Tate 1999 Margaret River Shiraz. This award was especially significant as it validated the Evans & Tate viticultural and vinicultural philosophy, whilst crystallizing the Margaret River region as a truly world class winegrowing appellation.
