From low yielding vines up to fifty years of age, grown to superior sites within the Armagh Valley and Polish Hill River districts, the O'Leary Walker team create a powerful and complex, exquisitely perfumed and seamlessly layered Cabernet Sauvignon, framed by judicious oak and supported by graceful tannins, reflecting the idyllic growing climes of Valley Clare.

O'Leary Walker is the culmination of two like minded winemakers. David O'Leary worked for Heemskerk and Chateau Reynella, he was group red winemaker for Hardy's and later at Mildara Blass. He held senior winemaking roles at Quelltaller where he launched Annies Lane. Nick Walker took up residence at Krondorf for sixteen years and was also at Yellowglen and Yarra Ridge. Cabernet grapes are destemmed but not crushed, into two and four tonnes fermenters. Natural yeasts are added as the ferments are hand plunged and pumped over to control temperature and flavour. Upon completion, batches are macerated, pressed and run into small French oak hogsheads for two years maturation.
 
Deep brick red, dark purple hues. Fragrant perfumes of blackcurrant, cassis and juicy berry fruits, a hint of cedar and spice. The contrasting influences of Armagh Valley and Polish Hill form a synergy, violets and blueberry, a palate of dark currants and bramble exhibiting great depth and length. A very solid Cabernet, rich yet restrained, elegantly poised over fine grain tannins, a style which Clare Valley is renowned.

David O'Leary and Nick Walker combine a wealth of experience, acquired during their time as corporate winemakers behind such labels as Hardy and Krondorf, Yellowglen and Annies Lane. From a single block of ancient, organically grown vines, established to Joan and Martin Smith's property over a hundred twenty years ago, the rich grey loam and pebbled slate soils yield an august, powerful wine. Generous and elegant, a refined seamlessness of palate and substantial weight of fruit for such very old vines, Clare Valley Shiraz of opulence and grace.

Bunches of Shiraz are de stemmed into a traditional two tonnes fermenter, vinified through the action of natural ambient yeasts. Batches are hand plunged up to four times daily for optimal control of temperature and extraction, maximising flavour and infusing elegant tannins. Upon completion, ferments remain on skins for a fortnight, followed by a gentle press into the luxury of the finest French oak barriques for thirty months maturation. Only a few hundred cases are made out of the best vintage years.
 
Deep dark red, intense purple hues. Rich concentrated forest fruit nose, spices, chocolate and cedar notes. Juicy middle palate and intense depth of fruit, layer upon layer of bramble, currants and seasoned plum, all supported by long grainy tannins and a measure of complex oak. Long, clean flavours, exquisite in its seamlessness, Shiraz of extraordinary length.

OLeary Walker Clare Valley Cabernet Malbec

David O'Leary and Nick Walker have amassed hundreds of gold medals and trophies between them, including the prestigious Jimmy Watson. A shared confidence in the quality of Clare Valley fruit was the catalyst for them to establish their own winery. Cabernet Sauvignon from the Doctor's Block at Polish Hill, a superior cool climate site, dry grown and low yielding, is vinified alongside a choice parcel of Malbec, picked off the estate vineyard in Watervale, taming the solid tannin structure and bringing the assembled wine forward.

Walker and O'Leary both love the job of making wine. They find their inspiration working amongst the vineyards of picturesque Valley Clare. Two thirds Cabernet Sauvignon, the balance in Malbec, are separately vinified through the action of wild yeasts in two and four tonnes fermenters, over the course of a fortnight. Batches are hand plunged twice daily and held on skins for a further fortnight to enhance complexity and build tannin structure. Upon completion, components are pressed and racked to a selection of seasoned and new French oak for two years maturation.
 
Rich ruby red, inky, vibrant hues. Well perfumed with red forest fruits, sweet cassis and intense florals. Textural palate, concentrated, generously flavoured, the gorgeous florals flow, classic forest fruits and intensity of oak, supported by juicy tannins and divine mineral acid length. a fully elegant style of Cabernet Sauvignon, complemented by the affable tannin structure of Malbec.

The Oleary Walker team are all about making great wine, they have elected to craft their estate Shiraz from fruit grown to three slightly different terroirs. Clare Valley is all about fragrance and eloquence, refinement and elegance. McLaren Vale is all about structure and cohesion, contributing rich, licorice and chocolate fruit along with a smooth, sumptuous mouthfeel. Choice harvests from the Doctor's Block at Polish Hill River, Jefferies of Armagh and Angelo Maglieri's at McLaren Vale, are assembled into a wine of astonishing balance, opulence and grace.

After working with large companies for many years, the Messrs David O'Leary and Nick Walker amassed over three hundred gold medals and sixty trophies, including the highly coveted Jimmy Watson. Shiraz is treated to a small batch vinification through the action of natural yeasts, hand plunged in a mix of two and four tonnes fermenters for twelve days. Batches remain on skins for a fortnight to enhance tannin complexity, maximising flavour and length, pressed and racked into a combination of seasoned and new French oak barrels for an extended term of maturation.
 
Deep red with purple hues. Virulent and complex on the nose, savoury elements of ground pepper and olive combine with sweeter characters of dark blackberrry, red liquorice and spice. The oak is all French, subtle and integrated, gently enhancing the layers of fruit. A palate that's concentrated and powerful, persistent and long, juicy tannins and balanced acidity.

After twenty years of the most distinguished winemaking, having amassed over sixty trophies and three hundred gold, including a Jimmy Watson and twice International Red Wine Maker of Year, David O'Leary and Nick Walker came home to Valley Clare. Two heart surgeons from Adelaide own the Doctors Vineyard at Polish Hill River. Grey loam soils over sandstone and slate, ideal for the Drs Cut style, a highly perfumed Riesling of gorgeous minerality, these old Clare Valley vines were always destined for something special.

The auspicious soils on Doctors block are fortuitiously littered with just the right amount of surface stones, reflecting the sun's warmth and hinting at just how tough the vines need to be to sustain growth and yield a high quality harvest of fruit. A combination of super rich soils and favourable climes make the holy grail for Riesling. Grapes are picked throughout the cool of night, de stemmed and crushed, a day of cold soak is followed a gentle press for finest free run juices. Batches are vinified by wild vineyard yeast flora on full solids over the course of a fortnight. Six months of lees stirring battonage builds complexity and texture.
 
Pale straw, green tinge hues. A stunning wine exuding wonderful florals, delicate lime and citrus notes, hints of lemon and fennel, bosc pear. A very fine palate with great length of acid, purity of lime fruits and crisp, lemon with hints of musk and fennel, balanced finish. The perfect accompaniment to freshly shucked oysters, Atlantic salmon or king george whiting.

The illustrious Hurtle vineyard was established along Wenzel Rd southeast of Oakbank in 1990, in the very epicentre of the Adelaide Hills most auspicious terroirs. Its fortuitious aspects and propitious limestone slate schist loams yield the stellar quality of Pinot Chardonnay, that demands fashioning into a superior single vineyard sparkler. Tiraged in own bottle for a minimum two years, the extended term on lees achieves a toasty and fully complex, strawberry shortbread style of effervescence, its intense nougat cream palate resolving on a refined, elegant finish.

The soils and surrounding mesoclimes are the thumbprint of all great wines. Virtually next door to each other in the Polish Hill River, lie two outstanding blocks of Riesling, Martin Joan Smith's and the Molloy Vineyard. These sites have long been known to yield some of the most expressive fruit that Valley Clare Valley can produce. A wine which espouses the virtues of Polish Valley, displaying great character and depth of flavour, offering mouth watering expressions of intense citrus fruits. The perfume is alluring with powerful slate characters and juicy minerality.

The avenue leading to these elite NASAA Organic Certified vineyards is called Blue Cutting Road. Grey loam acid soils over sandstone and slate make up the profile, much of the top soil is littered by rock, hinting at just how tough the vines must be to sustain growth and produce quality fruit, not to mention the work of the vigneron to ensure quality. Fruit is hand harvested, each section of the vineyard is treated separately. Grapes are de stemmed and given a gentle crush to burst the berries. The finest quality free runs are chilled, preserving expression of fruit, seeded and treated to a fortnight of vinification. Upon completion, the wine is racked off lees, chilled to 5C and filtered before bottling.

This wonderfully fragrant, blossom accented wine, has great mouthfeel, balance, and an impeccable lingering finish. Delicate, balanced with crisp natural acidity. O'Leary Walker Wines is the culmination of two like minded winemakers that met over twenty years ago

Established in 2001 by David O'Leary and Nick Walker, their philosophy is pretty simple, source the best grapes from the best vineyard sites and craft great wine. O'Leary Walker is based at Leasingham in the Clare Valley, South Australia, but they don't limit themselves to producing just Clare Valley wines. O'Leary Walker also source fruit from other premium grape growing districts in South Australia including the Adelaide Hills, Barossa Valley, Coonawarra and McLaren Vale. The theory behind this is to draw on the grape varieties that excel in these quite different viticultural climates.

David O'Leary and Nick Walker both have a love of winemaking, a desire to create something exceptional and a strong affinity with the Australian wine industry. After working for large companies for twenty years and amassing over 300 gold medals and 60 trophies (including a Jimmy Watson and twice International Red Wine Maker of the Year), David and Nick had achieved just about everything that a winemaker could.

A new challenge beckoned and David and Nick's belief in their winemaking skills and their confidence in the fruit and the vineyards available to them was the catalyst for them to establish their own venture based in South Australia's picturesque Clare Valley. As with all things in life, a window of opportunity opens only a few times and they believed it was their turn to step up, have a go and return to what winemaking is all about, making great wine from great vineyard sites.

O'Leary Walker Wines was born

David graduated from Roseworthy Agricultural College in 1980. He spent a year in Tasmania working for Heemskerk Wines before joining Chateau Reynella in 1981. He was appointed group red winemaker for Hardy's in 1990 and held that role until joining Mildara Blass in 1994.

At Mildara Blass, he held senior winemaking roles at Quelltaller Estate in the Clare Valley where he launched Annies Lane and at Mildara's Coonawarra winery. During his time with Hardy's and Mildara Blass, he also made wine if France and California.

David has achieved considerable in his twenty years of making wine. A Jimmy Watson Trophy in 1988 and twice International Red Winemaker of The Year (1992 and 1994) sit proudly along with numerous other trophies and gold medals. David's goals have never changed, he simply wants to make great wine.

Nick's philosophy is pretty simple, make the best wines possible from the best vineyard sites, and make a little time for fishing

Nick graduated from Roseworthy Agricultural College in 1982 and took up residence at Krondorf Wines for the next 16 years. Nick was instrumental in making some of the great Eden Valley Rieslings of the time and had enormous success on the show circuit with his white and red wines. Nick undertook sparkling winemaking duties in 1998/1999 at Yellowglen and was chief winemaker at Yarra Ridge in 2000.
