Chardonnay is a wine that Mornington does exceedingly well, the cooling maritime breezes of Port Philip Bay encourage vines to yield fruit with complex, crisp and intense varietal flavours. Lindsay McCall is gifted at constructing the most auspicious efforts across a range of styles. Estate Chardonnay is vinified entirely from fruit grown to a half hectare of the choicest plantings grown to three estate managed vineyards at Red Hill. An effusive Mornington wine with a presence of savouryness and layers of fruit, to accompany richly cooked shellfish or escalope of veal.

Paringa Estate wines regularly enjoy an unmatched level of success in as many trade shows and national competitions as they are entered, the only limitation being a relatively small size of production. Chardonnay is had picked off a single block of vines on the north side of Callanans Road Vineyard at Red Hill South. Whole bunches are passed through an air bag press to obtain the highest quality free run juices. Parcels are barrel fermented in a high proportion of new Vosges and Allier French oak barriques. Paringa spends almost a year maturing on sedimentery yeasts, whilst being treated to a course of monthly lees battonage for complexity and palate richness.
 
Medium yellow green in colour. Savoury bouquet of grilled nuts, lemon and mineral. The palate displays citrus and stonefruit, nectarine and peach, along with the creamy nutty characteristics introduced by barrel fermentation. The mouthfeel is long and rich, finishing with subtle malolactic caramel/ butterscotch flavours and good natural acidity.

Crafted around a backbone of intensely flavoured, estate grown fruit, supported by hand chosen parcels from exceptional vineyards around Redhill. A combination of mature rootstock and meticulous vineyard management are essential to the ultimate quality of wine. Crop thinning to reduce yields while maximizing quality of harvest is central to the viticultural program. Vines are trellised to the Lyre system, which allows them to find their own natural balance. Bunches of Pinot Noir are completely destemmed into traditional, open top, two tonne fermenters, for a decidedly Burgundian style of vinification, followed by a term of eleven months on lees in a high proportion of new French oak barrels.

Within Paringa's superlative Mornington estate property, lie three precious blocks of vine, yielding unique harvests of the most extraordinary Shiraz. Each parcel is picked on the specific day determined by individual ripeness, to be separately vinified in a bespoke manner, aimed at preserving the individual character of terroir. Assembled into a wine of balance, power and restraint, Paringa articulates the cool climate compexity and fragrant cherry spice of Mornington, while offering the substantive structure and chocolate fruit richness of extra fine Shiraz.

Lindsay and Margaret McCall began their incredible journey in 1984, with the purchase of a derelict orchard on Paringa Road at Red Hill. Their requirements included north facing slopes, a permanent running creek and adequate wind protection. The vines were established to a distinctly unique Lyre or U trellis system, employing an elaborate steel frame assembly. The site is now producing harvests of Mornington Peninsula's finest fruit. Bunches of Shiraz are destemmed into traditional, two tonnes open top fermenters. Upon completion, batches are racked to a selection of seasoned and new French oak barriques for eighteen months maturation.
 
Purple scarlet colour. The distinctive cracked black pepper/ spice characters of Shiraz, plums, brambleberry and notes of cassis. On the palate, spicy blackberry and plum fruit flavours are supported by a length of firm yet soft, fine grained tannins. This is one of Mornington's finest renderings of Shiraz, a wine that will continue to evolve, yet can be enjoyed young alongside the finest cuisine.

Paringa Estate has established an unassailable repute over the last twenty years as one of the leading small winery vineyards in the country, named Australian Winery of the Year by James Halliday. Paringa Shiraz won a total of six trophies including Best of Show at the 2006 Royal Sydney, sweeping the field with five Gold Medals and five Trophies, including the prestigious Best of Show and Best Shiraz at the 2009 Royal Sydney, as well as Best Shiraz Trophy Royal Melbourne. Vintage 2007 has claimed a total of five Gold Medals to date.

The vineyard is set to a distinctly unique Lyre or U trellis system employing an elaborate steel frame assembly, and is now producing some of the Mornington Peninsula's best quality fruit. Fermentation of the exclusively estate grown Shiraz is carried out in three tonnes open steel pots, exactingly handled to the most adroit vinification techniques. Each component is then barrel aged in a combination of new and prior use French oak barriques.
 
Deep scarlet colour with darker robes. Bouquet offers the distinctive estate cracked black pepper/ spice characters combined with ripe plum and berry aromatics. On the palate, spicy blackberry and plum fruit flavours are supported by firm fine grained tannins that will soften with bottle development. In 375ml size is drinking beautifully, can be enjoyed young with the finest food and will evolve promptly with cellaring.

An accord of choice Chardonnay harvests from four estate managed vineyards within the Red Hill subregion of Mornington. Paringa has renewed its focus on Peninsula grown fruit and have earmarked an inventory of fruit from the finest sites. Delightfully fruit driven after a brisk vinification and timely bottling, its ripe stonefruit and mandarin nose is beautiful almond milk flavours and nutty barrel ferment characters. Fine, elegant and intense, all the hallmarks of Paringa Estate.

The early success at Paringa Estate wines is a testimony to founder Lindsay McCall's passion and intuitive feel. Lindsay managed the ten acre vineyard and made wine, while maintaining a full time teaching job. The inaugural vintage was a mere three tonnes of fruit, it involved a very steep learning curve. Chardonnay is sourced from Paringa Estate paladin vineyards, including the Thacore property on Callanans Road and the Sea Vista site at Paringa Road. The winemaking process is almost identical to that of the Paringa flagships. Whole bunches are pressed to seasoned French oak barrels and treated to a partial wild yeast vinification on gross solids, followed by nine months maturation.
 
Medium to full yellow green. Bouquet is fruit driven with citrus and stonefruit characteristics, nectarine and peach in particular. The palate has similar tropical and stonefruit flavours combined with subtle nutty barrel ferment characters and good acidity. This is a lovely fresh wine that will provide excellent current drinking whilst continuing to develop.

The essential Mornington Pinot Noir, by one of Australia's leading proponents of the variety and most eminent regional performers. Grapes are sourced from three estate leased properties at Red Hill and a number of superlative sites tended by good growers along the Peninsula. The bouquet offers an abundance of lifted blackcurrant, plum and spice. The palate is generous with cherry plum fruit flavours supported by soft fine grained tannins. The Paringa team work towards the ideal time of picking, when flavour development and ripeness are just right.

School teacher Lindsay McCall's fascination for wine began in the mid 1970s. He decided to pursue his dream in 1984 with the purchase of a derelict orchard on Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines. His affinity for the land and astonishing feel for winemaking produced vintages of Pinot Noir that propelled the status of his efforts to stellar heights. Lindsay works closely with some of Mornington's finest vignerons to mentor and to nurture better techniques of viticulture. Grapes are completely destemmed into 2½ tonnes open fermenters, for three weeks vinification on skins, followed by a year on sedimentery lees in seasoned French oak barriques.
 
Bright scarlet colour. Bouquet exudes dark cherry aromas, a sprinkle of cool climate Mornington spice and subtle oak characters. A ripe, fruit driven palate brimming with Pinot fruit flavours, a wine of considerable depth, layered with finesse and style. In the search for a new vineyard property, their requirements included a north facing slope, a permanent running creek and adequate wind protection. The shade thrown by the enormous 60 year old pine trees that surrounded the property proved to be a negative, but when the trees were removed it revealed the stunning views that are now such a recognisable feature of Paringa Estate. The first vines were planted in 1985 and by 1990 the 10 acres (4.2 hectares) were fully planted.

The early success of Paringa Estate wines was a testimony to founder Lindsay McCall’s passion and intuitive feel. Lindsay managed the ten acre vineyard and made wine, while maintaining a full time teaching job. First vintage in was in 1988 processing a mere three tonnes of fruit. With no previous winemaking experience, it involved a very steep learning curve. The 2000 vintage was made up of 32 tonnes of Estate grown fruit and 46 tonnes of purchased fruit from a number of local growers.

After a redevelopment of the winemaking operations allowing production to expand to much higher levels, the total crush in 2005 was 155 tonnes, with the majority of fruit coming from two leased/ managed vineyards in Callanan’s Road and Paringa Road. The estate's ten acre home vineyard is set to a distinctly unique Lyre or “U” trellis system using an elaborate steel frame assembly, and is now producing some of the Mornington Peninsula's best quality fruit.

In the first few years the young vines displayed serious vigour problems caused by the fertile basalt clay soils of the Red Hill region. Several trellis methods were trialled with the Lyre system being most effective at allowing a bigger vine to develop and assisting the vine to find its own natural balance. The divided canopy helps open the vine foliage up allowing better airflow and light penetration to both the leaves and fruit, assisting the ripening bunches to develop good colour and varietal flavours.

The current winery and restaurant building was constructed in 1998 on the same site as the original smaller winery shed. The winery is made up of a barrel room built partly below ground level and with the restaurant on the second floor level above. This natural insulation ensures a cool stable temperature needed for barrel maturation. Double storey height allows very tall, narrow 10,000 and 15,000 litre storage tanks, and maximises the remaining floor space that is used to house the temporary 2 and 3 tonne open stainless steel fermenters used during vintage.
