Kooyong Estate is highly specialised for the big and rich Burgundy style, rendered from tiny parcels of unique terroirs that are matched to the individual characteristics of clone. A total coverage amounting to nine hectares of prime Mornington viticulture, are fastiduously husbanded to yield nothing but the most exceptional quality harvests. Vertically shoot positioned, estate grown fruit, forms the backbone, supplemented by choice parcels grown to mature local vines. Chardonnay is gently whole bunch pressed directly into French oak barriques for a wild, indigenous yeast vinification, followed by ten months maturation sur lie and minimal filtration before bottling.
 
Bright straw lime colour. A delicate, aromatic nose showing grapefruit and lime, hints of fresh ginger, soft layers of cream and quartz silica minerality. The palate is pure and fine with some flintiness. A Clonale that is pert and linear in youth but with the lees creaminess in place to build texture and weight as it evolves.

Consistently one of Mornington's very best, a meticulously crafted single vineyard Chardonnay, from fruit grown to 3½ coddled hectares at Tuerong. Kooyong is a true domain in viticultural terms, founders Chris and Gail Aytward were inspired to establish vines on a very special piece of terroir, chosen for its potential to produce quality fruit. The vineyard itself was husbanded from the ground up, with a view to growing Mornington's finest Chardonnay. A fully engaging, richly barrel fermented, mineral and quartz style of new world Chardonnay.

A mix of several Chardonnay clones, selectively picked off exclusively estate grown vines, trained to trellis vertical shoot position on the Farrago and Faultline blocks. Faultline makes wines that are richer and fuller than Farrago, articulating greater textural characters and supported by the inherent minerality. Farrago Chardonnay is defined by its very linear character and strong minerality, the premier wine with the greatest potential. Fruit is whole bunch pressed and barrel fermented in a selection of new and seasoned French oak, without any added yeast, followed by a year's maturation Sur lie.
 
Vibrant pale straw with hints of gold. The nose shows lemon peel, grapefruit and wet stones. Palate has richness but is kept tight and focused by bright acidity running the entire length. Youthful and intensely flavoured, with bright citrus notes as well as sherbet, jelly crystals, mandarin and some oatmeal with hazelnut. Shows power, concentration and youth at the moment as it continues gain complexity.

Kooyong is a domaine in the true sense of the word, the exclusively estate grown grapes never leave the property until well after bottling. The wines of Kooyong aim to manifest terroir, an integration of geology and soil, the mesoclime of individual parcels and the influence of Mornington's maritime clime. A culture of holistic husbandry in the vineyard and artisanal diligence throughout the vinification serves to articulate the uniqueness of Kooyong Pinot Noir, respectfully and without artifice.

A tally of clones are hand picked off fully mature vines, completely destemmed and vinified for up to three weeks in a mix of large oak foudres, cement vats and fermenters, the batches are left to self inoculate through wild and local yeasts. After completion of natural malolactic, components are filled to a selection of French oak barriques for nine months, followed by transfer to large oaken foudres for another ten months before assemblage.
 
Bright garnet, maroon colour. A generous, open nose of dark berries and a touch of vanilla bean. The flavour spectrum ranges from strawberries, raspberries, and boysenberries, through to cinnamon and clove, tapenade and coffee, balanced by abundant ripe, round tannins. A thickness and richness of texture, the varietal character remains pure.

Kooyong Farrago Chardonnay

Port Phillip Estate is situated at Red Hill, very near the heart of beautiful Mornington Peninsula. Farrago is a single hectare, gently sloped block planted to mottled clay soils and ironstone pebbles, a highly auspicious terroir for Chardonnay, which invigorates the vines and infuses grapes with luxurious minerality and well defined linearity. Parcels of hand picked fruit are gently whole bunch pressed into French oak barriques for a wild indigenous yeast ferment, followed by a year's maturation, racked for clarity and a minimal filtration to preserve the integrity of a resplendent vineyard.

Kooyong Estate was established with a view to craft the most articulate wines, minimal harvests from measured blocks which are defined by their eloquence. There's less than a half hectare of vines earmarked for Faultline, a place of propitious deep clay soils which yield Chardonnay of exquisite earthy characters, great depth and fuller, richer palate. Hand picked grapes are gently whole bunch pressed into French oak barriques for a spontaneous ambient yeast ferment, followed by a year's maturation on sedimentery yeast lees, bottled unfined and minimal filtration.

Kooyong Ferrous Pinot Noir

Planted exclusively to Pinot Noir, Kooyong Estate's Ferrous Vineyard lies atop sandstones which are encrusted with iron oxide, giving them a rusty appearance and inspiring the Ferrous moniker. Unique soils impart the intriguing characters of hot wet stone and rusty outback to the exquisitely compex nose. The scant 1.74 hectares of Ferrous Block yield an extremely limited release, single vineyard wine, arguably Mornington's flagship Pinot Noir.

Ferrous Vineyard is less protected from the northerly winds, and the soil extremely unforgiving, resulting in greater stress being placed upon the vines. The vines here tend to run out of available water much sooner than in most parts of Mornington. The resulting wine is more masculine in nature, the tannins have more presence and the colour is richer. All grapes are picked by hand and destemmed alongside a portion of whole bunches, into large oak foudres for three weeks of ferment without any added yeasts. A course of wild malolactic in barrel is followed by seventeen months maturation in French oak, a third of which are new, to be bottled without any fining or filtration. Alcohol 13.5%
 
Dark blood maroon colour. Aromas of crushed ironstone, pink grapefruit, fresh beetroot, wild/ sour cherry and a forest floor. Foamy strawberry and strawberry shortcake, tart black cherries, sleek texture, creamy vanillin note and oak seamlessly integrated, a density of fruit flavours, an utterly pure, savoury line, pert acidity and assertive tannin propel the palate to length.

The wines of Kooyong aim to express their terroir, an integration of geology, soils and mesoclimates of the various sites within the vineyard and the weather of the growing season, to articulate the unique characteristics diligently, respectfully and without artifice. The most sheltered block of Pinot Noir is called Haven, its coddled vines yield grapes of enticing purple jube opulence, completely destemmed for wild indigenous yeast vinification and a year's maturation in French oak barriques, its velvet richness and lushness supported by firm underlying tannin structure.

Massale is an assemblage of Pinot Noir parcels grown to Tuerong and Balnarring estate vineyards. Destemmed grapes and a component of whole bunches are indigenously vinified in open vats for up to three weeks without the introduction of any yeasts. Batches are treated to natural malolactic followed by a year's maturation in French oak barriques and larger format foudres, achieving a wine that's completely approachable in its youth.
 
A pretty purplish crimson colour. The nose speaks of bright red fruits, raspberries and cherry, then violet florals, dried meadow herbs and hints of cherry pip, oak and botanical spice. The palate is attractively brambly with a core of red fruits, fresh acidity, fine, graphite tannins and a savoury edge which balances the fruit. Massale is an elegant wine which will continue to evolve beautifully.
Kooyong Meres Pinot Noir

Kooyong Estate is located at Tuerong and focuses on growing a small range of Burgundesque varietal clones. There are five distinct vineyards of which three are planted to Pinot Noir, the fastidiously husbanded blocks produce stately wines. Meres is a small, single hectare block planted to a gentle north facing slope, the most exposed parcel of Kooyong's Pinot Noir, a place of low vigor and restricted yields. The frugal loam over clay soils produce highly aromatic, beautifully perfumed grapes of velvet tannins and sound structure.

The cultural practices of Kooyong respect and nurture the inherent character of each block. All vines are hand cane pruned, if the season is showing higher yields, bunches are thinned to focus the intensity of flavour in remaining clusters. All grapes are hand picked and the vinification is nothing short of meticulous. Parcels of destemmed grapes and whole bunches are vinified through the action of spontaneous, ambient yeasts in a mix of concrete vats and fermenters for eighteen days. Upon completion, batches are pressed and racked into a selection of seasoned and new French oak barriques for malolactic and fourteen months maturation, bottled unfiltered and unfined.

Kooyong Estate was established on a gently undulating 93 hectare property neighbouring Devilbend Reserve, home to many native water birds. The Kooyong name means where the wild fowl gather. The vineyard and winery are part of the Gjergja family domain which also includes Port Phillip Estate. Compared with more southerly vineyards on the Mornington Peninsula, Kooyong experiences a warmer, drier climate, and the light, sandy clay soil is also less vigorous than the more typical rich loam of the region. The winemaker is Sandro Mosele.

Kooyong Estate

Chris and Gail Aytward established Kooyong in 1995 after being Introduced to the wine industry when purchasing a farm at Shoreham on the Mornington Peninsula. The site contained three acres of Chardonnay vines. At this time Mornington was rapidly establishing itself as a premium Pinot Noir and Chardonnay grape-growing region, as both these varieties were suited to Mornington's cool maritime climate. The Aytwards were inspired to develop a second site, specifically selected for its potential to produce top quality fruit, and today wines released under the Kooyong label comes exclusively from this site.

In 1998 plans for a large and modern winery were devised and construction began. Chris Aytward's experience as a property developer with the Grollo brothers helped immensely in the construction of an impressive winery for Kooyong's operations. State of the art equipment was installed to give the winemaking team the best possible opportunity in processing, fermenting and storing top quality wines. Kooyong Estate now lays claim to 52 acres of Pinot Noir and 27 acres of Chardonnay vines. Kooyong strives for complexity in its wines by exercising eight different clones of Pinot and ten clones of Chardonnay.

The Mornington terroir features an undulating ridge system, which receives considerable rainfall throughout the year. The soils vary from rich red clays, to lighter sandy loams depending on location. Kooyong's location was selected specifically to suit production of Pinot Noir and Chardonnay grape varieties. Many vineyards on the Mornington Peninsula struggle with excessive canopy production due to the rich fertile soils. This is often translated in the wine as green or lacking body. The sandy base of Kooyong's terroir helps reduce this vigour. Each clone has its own inherent characteristics which, when skillfully blended together by accomplished winemakers, give wine its many textures and complexity.

Kooyong uses a variety of canopy management techniques to ensure high quality, concentrated grape production. Some of these include shoot thinning and fruit dropping. The Kooyong Estate parcels are situated on the Moorooduc flats of the Mornington Peninsula. The land Is slightly graded facing a north direction. The vineyard has been planted with rows running from South to North, which ensures maximum sunlight exposure. The vines are planted using the vertical shoot position (VSP) trellising system. The vines have been spaced out to reduce shading and increase fruit exposure to sunlight.

Wines are made on site to techniques specifically designed to deal with numerous small batches. The philosophy is to preserve the vineyard characters exhibited by the fruit. Chardonnay is whole bunch pressed and transferred to new and used French oak. Fermentation occurs naturally without yeast additions. All of the Pinot Noir fruit is hand picked and 100 per cent de-stemmed into open vat fermenters. The fruit is chilled to approximately 8-10 degrees and then allowed to warm up ambiently. Spontaneous fermentation occurs about 4-8 days later. The Massale parcels use only 10 per cent to 15 per cent new French oak. The wine is then bottled after approximately 12 months. This shorter maturation period is designed to make this wine more approachable when young. Handpicked Pinot Gris and Viognier is whole bunch pressed and transferred to used French oak. By using only old oak, the Pinot Gris wines receive the benefit of added texture without any oak flavours being imparted.

Kooyong is well equipped with an advanced irrigation system. This allows the winemaking team to administer water to each vine depending on the stress levels expressed by the vines. Kooyong's site receives less rainfall per annum than surrounding vineyards an the Mornington ridge system. The use of an irrigation network enables a high degree of control over the development of both the Pinot Noir and Chardonnay vines.
